Lentil's bread mini pizza

 


This is an easy and tasty way of eating red lentils....yes!....red lentil's bread.....

This is the third time that I make lentil's bread, and I love it. You can make it as a pancakes and eat it with jam or cheese for breakfast (delicious!), or as I made it in this case a kind of mini pizza for a fast and healthy dinner

Lentil's bread

1 cup of clean and washed red lentils

2 cup of water (I used filtered water)

Mix it and soak it for a minimum of three hours. I soak it overnight.

Blend it in a blender with the same water. This is the reason I used filtered water. Add more water if needed (2 tablespoons?) in order to have a batter as a pancake. Cook it in a hot pan previously brushed with olive oil for 2 minutes each side side.



I had some zucchini that I cut in pieces, and stir fried with some Herbs de Provence, salt and pepper. Place a piece of cheese over the lentil's bread, then a portion of the zucchini, ano another layer of cheese on top if you desire. Bake it for 5 minutes in the oven and ENJOY!!

  2. I used to keep a glass container of red lentils in our home up north for good luck but I've never cooked with them. Thanks for a lovely recipe.
