Flan Pâtissier


I love France, but what I love the most are its pastries.....well.....I love all European pastries.....In the meantime, I make them at home


I love Flan Pâtissier.....creamy, fresh and simple.....

Flan Pâtissier

Dough
200 grams flour 30 grams icing sugar 100 grams of butter very cold and in pieces 1 egg 50 ml Water

Mix the flour and icing sugar, and combine it with butter until you have a sandy mixture. Add the egg and water. Combine it until you have a smooth not sticky dough. Leave it ion the fridge for 1 hour.

With a roll pin, roll it until you have a thickness of 3mm. Cover the bottom and sides of the mold. Leave it in the fridge again.

Creme Patisserie

220 ml of milk
120 ml of cream
3 eggs and 2 egg yolks
2 teaspoon of vanilla paste
80 grams of sugar
30 grams of corn starch



Mix the milk, cream and vanilla. Place it in a pot, and warm it up to infuse the milk. Also, you can infuse the milk with cinnamon, orange peel or lemon peel.

Beat the eggs, egg yolks and sugar, until you have a creamy yellowish mix. Add the cornstarch. Slowly, add the warm milk and mix it well to avoid lumps. Cook it until it is thick. Place the hot vanilla cream in the mold, and bake it at 370F for about 30-40 minutes until you have a surface that is partially burned. ENJOY!
