Turkish bread with green onions and cheese



I made home made Kimchi, and I had some green onion leftover. I was thinking to make a Chinese green onion cake, when I watched this bread in youtube. I had to make it immediately. I thought it will be greasy, but it was not. It was flaky, soft, crunchy, and delicious!!

550 grams of flour
300 ml of water 
10 grams of salt
1 tablespoon of sourdough (optional). The orifinal recipe did'nt have it, but I always add sourdough to make the bread more digestible.
1 egg.

For the filling:
4 green onions chopped.
Salt
Pepper
Cheese (optional)

For Between the layers
Melted butter and olive oil

Mix all the bread ingredients, and kneed it for 7 minutes. Let it rest for 30 minutes. Divide the dough in 6 pieces for 3 big breads. You can divide the dough in more pieces to make smaller breads. Let it rest for 15 minutes.



Mix the chopped onion with salt and pepper. 
With a pasta maker, pass another dough ball until #6. Brush it with a mix of melted butter and olive oil. Distribute some green onions and pieces of sliced cheese.


Pass another dough ball until #6, and place this layer on top.  Brush it with a mix of melted butter and olive oil.


Cut it in 3 strips. 


Fold one strip till the end and place this ball on top of the other strip and continue rolling it.


You will have something like this



Let it rest covered for 1 hour. Then, with a roller pin flatten it. 

Place it in a hot pan with olive oil, and cook it for 2 minutes each side.
