Amaretti



For a long time, I wanted to make amaretti. A friend shared with me her recipe, and I love it. The combination of orange and lemon zest gives them the exact bitterness touch that I love.

Amaretti
250 grams almond flour
3 egg whites
100 grams of sugar
50 grams of icing sugar
Salt a pinch
zest of 1/4 lemon and zest of 1/4 orange
1/2 teaspoon almond essence
1 teaspoon vanilla essence

Mix the orange and lemon zest with icing sugar. Set aside. Mix the rest of the dry ingredients with the icing sugar zest mix and set aside.

Beat the egg whites with a pinch of salt until they are firm and foamy. Add the almond and vanilla essence. Mix it with the dry ingredients. 

Place a teaspoon size and make a ball (it is sticky). Cover it with icing sugar. Place it on a oven tray with parchment paper. Bake it at 160C for 20-25 minutes until they are light golden. Let it cool and eat it!....Enjoy!
