Prawns, Mushroom, Fungi Porcini and Sundried tomatoes in a pot


It is freezing cold here these days!.....I wanted to have something hot, fast, delicious, tasty, spicy, and good for cleaning my freezer.

I has prawns that were yelling.....Eat me!! plus other things that I put in this dish.....we ate it with a good home made bread and some cheeses!

Prawns, Mushroom, Fungi Porcini and Sun dried tomatoes in a pot

15 prawns clean and deveined
200 grams mushrooms cleaned and sliced
50 grams of sundried tomatoes chopped and previously soaked for at least 3 hours
25 grams of fungi porcini chopped and previously soaked for at least 3 hours
6 garlic cloves sliced
!/2 cup white wine
1 cup of cream
1/2 cup parmiggiano reggiano grated cheese
water as needed
salt
olive oil
butter
chili flakes
Spanish hot paprika
salt
thyme
rosemary

In a bowl, place the prawns, and season them with salt and paprika. Set aside.

In a big pan, place some olive oil and 1 tablespoon of butter. Add the garlic cloves. Then, add the mushrooms, sundried tomatoes, and fungi porcini. Put it in medium high for 2 minutes with a lid. Stir it and add salt, thyme, and rosemary. Let it simmer at medium flame for 4 minutes, and add the white wine. Let it simmer at medium high heat for 4 minutes stirring it. or until the wines evaporate. Add 1/4 cup of water. Let it simmer for 7 minutes at medium heat. Add the cream, grated cheese, and chili flakes.  Stir it well.

In a pan, place some olive oil and butter, and cook the prawns 2 minutes per side, or until they are done. Once they are cooked, mix it with the mushroom mix. Serve it warm in clay dishes. ENJOY!

  2. This looks so good! I can just imagine the taste sensations on my tongue. We will probably have a stir fry with shrimp for dinner tonight. Not quite as good as this perhaps but tasty nonetheless.
