I don't know the name in Spanish, but in English is called Vanilla Slice Pastry. I couldn't take better pictures because it was at night, and the day after these pastries disappear!
It is simple, yet delicious, and so so so good!
Vanilla Slice Pastry
Dough
300 grams of flour
300 grams of butter cold and in dices
140 grams of water
Pinch of salt
This is a puff pastry. Combine all the ingredients avoiding getting it too warm. Place it in plastic, and refrigerate it for 30 minutes. With a rolling pin roll it out into a rectangle. Fold the top quarter into the middle, as well as the bottom quarter, like a book. Then, rotate the folded dough in 90 degrees, and roll it out like a rectangle. Repeat the sequence of the book folding. Place it in the fridge for 30 minutes. Repeat this folding again 3 times with intervals of 30 minutes in between to place the dough in the fridge.
Make 4 rectangles, and docking them with a fork. Place it on a parchment paper, and on top place another oven tray. Thus, it will not expand, but it will develop layers. Bake it for 20-25 minutes at 385 F. Let it cool.
Vanilla cream
500 ml milk
110 grams of sugar
4 eggs
1 tbsp vanilla paste
50 grams cornstarch
Mix milk, sugar, and vanilla paste, and place it in a pot at medium heat for 5 minutes. Add the eggs, and cornstarch. Mix it well, and cook it at medium heat until it thickens. Let it cool.
Icing sugar to decorate
On a baked puff pastry, place a generous amount of vanilla cream, on top place another baked puff pastry. Sprinkle icing sugar, and cut it carefully. ENJOY!
