It was Thanksgiving weekend....a time to relax, eat, and enjoy the family!
My daughter made this cake, and the recipe was shared to us by a dear friend. The original recipe use a kind of lemon curd with gelatin, but because it is Thanksgiving, we made it with apples....it was delicious!
Cake
100 grams of sugar
100 grams of almond flour
100 grams of flour
1 teaspoon of baking powder
3 eggs
Water or milk as needed
Mix all the ingredients, and bake it in a 25 cm round pan in a preheated oven at 350F for 12 minutes or until is done. I bake it along with the crumbles to make an efficient use of the oven.
Crumble
80 grams of flour
80 grams of sliced almonds
80 grams of sugar
80 grams of butter
Mix all the ingredients, and bake it on a tray with parchment paper in a preheated oven at 350F for 12 minutes or until is brown.
Apple puree
7 small apples peeled and in pieces
80 g water
1/2 teaspoon of cinammon
5 gelatin sheets
2 tablespoons of sugar
Place all the ingredients in a pan, and cook it until you have an apple sauce. With a hand blender, make it a puree, and add the gelatin sheets. Place it on top of the baked cake, and place it in the fridge for 2 hours until is set. You can modify the amount of gelatin to make it harder or softer
Cheese cream
2 eggs
100 grams of water
2 teaspoons of vanilla essence
90 grams of sugar
4 sheets of gelatin soaked in cold water
1 package of cream cheese (around 225 grams)
200 g cream
In a pan, combine the water, eggs, and sugar. Beat it well, and cook it until you have a thick cream. Add the gelatin, and the vanilla essence. Once is cold, add the cream cheese and mix it well with a hand blender. Whip the whipping cream, until is firm. Add to this mixture. Place it on top of the apple gelatin. Once it is firm (about 2 hours), decorate it with the crumbles. ENJOY!....It is delicious!!
