Let's stop the bread baking and go back to cooking
This was a "caldoso rice", but I put less water, and I ended up with a delicious creamy rice.....
Creamy rice with seafood
4 cloves of garlic chopped
1 onion chopped
50 g olive oil
260 g of fried tomato
300 g rice
100 g red pepper, cut into pieces
750 g of vegetable broth
100 g of white wine
1 teaspoon salt
1/2 teaspoon of fresh grinned cumin
1 teaspoon of mild Spanish paprika
A pinch of ground pepper
A pinch of cinnamon
Few strands of saffron
Prawns to decorate
Fry the onion, red bell pepper and garlic, and add the fried tomato. Let it cook for 5 minutes. Add the wine, and let it boil for 5 minutes. Add all the spices along with the salt. Incorporate the vegetable broth. Add the rice, and let it cook for 15 minutes at medium heat. Turn it off and let it rest for 5 minutes. Serve with some stir fry scallops and prawns on top, or vegetables if you want.
So flavourful and delicious...I love those jumbo succulent prawns.
