Kneed them for 10 minutes. Add the olives and mix them for 5 minutes. Let it rise for 90 minutes. Divide the dough in 3 pieces. Make balls with each one, and cover them for 30 minutes. Flatten each ball in a rectangle (1/2 cm each one). Place it on a parchment paper. Made a cut in the middle and 3 cuts in each side. Place them in the oven that it is off, but with a pot with boiling water to make it warm and humid. Let it proof for 2 hours. Bake them at preheated oven for 8-10 minutes at 450 F.
