Green Olive Fougasse

 








And I continue making bread....this time green olive fougasse

Green Olive Fougasse

Olive marinated
300 grams green olives chopped 
1 tablespoon herbes de provence
30 grams olive oil
Mix and let them marinate for 2 hours.

Poolish

170 grams of flour

170 grams of water

1 teaspoon of yeast 

Combine all together. Let it rise for 2 hours at room temperature. 

Dough
The poolish
190 grams of water
340 grams of bread flour
2 gr dry yeast
2 teaspoons of salt
 
Kneed them for 10 minutes. Add the olives and mix them for 5 minutes. Let it rise for 90 minutes. Divide the dough in 3 pieces. Make balls with each one, and cover them for 30 minutes. Flatten each ball in a rectangle (1/2 cm each one). Place it on a parchment paper. Made a cut in the middle and 3 cuts in each side. Place them in the oven that it is off, but with a pot with boiling water to make it warm and humid. Let it proof for 2 hours. Bake them at preheated oven for 8-10 minutes at 450 F. Take them out of the oven, and brush it with olive oil immediately. ENJOY!
