I don't remember where I found these rolls, but it was last year. I have tried them, and I'm in love with them. The filling options are endless, and it is a way to recycle food from the previous day.
I have measured the base, but the filling depends on what you have in the pantry and fridge.
Zucchini rolls with cheese and what you want
1 zucchini washed and finely sliced per person. I used a potato peeler.
80-100 grams of grated cheese that can be melted
Herbs. I have used zaatar, rosemary, oregano, and thyme
Wash and slice a zucchini. Distribute it over parchment paper. Sprinkle some herbs of your choice. Preheat the oven at 375F. I made four, and I rotated them in different levels every 2 minutes. Baking time total was 8 minutes, or until the cheese has melted. Take it out of the oven, and let it cool. It is important to fill it once it has cooled because the cheese act as a glue.
Left over of spinach tortilla
Tuna with mayonnaise
Hard boiled eggs with mayonnaise
Olives
Avocado
Red pepper bell in oil
and whatever you have in the fridge.
They are fulfilling, a meal itself, and addictive!......ENJOY!
