Red lentils and veggies pie.....recipes for Michaelmas


Everybody knows that I celebrate everything....On September 29th, it was Michaelmas day, also known as the Feast of the Archangels. Therefore, is a day to celebrate Archangels Michael, Gabriel, and Raphael, along with all the All Angels.

What it is eaten this day? a  bread with a shape of a Dragon; thus, you can slice the bread as Archangel Michael did with the dragon. Also, some vegetable tart and simple food. It is a kind of Thanksgiving without turkey. 


This is a very tasty and healthy dish....the end result was delicious!

Red lentils and veggies pie

1 cauliflower
2 bell peppers (1 red and 1 yellow) diced
1 onion chopped
3 garlic cloves chopped
1 cup of red lentils cooked
3 zucchinis
1/2 cup of home made tomato sauce
salt
pepper
oregano
Herbs de Provence
cheese
olive oil

Cook the cauliflower. Let it cook. Mash it, and season t with salt, pepper, and the spices you like. In my case, I used oregano and garlic. Place it in am oven proof dish as a base. Set aside.

Stir fry the onion, garlic, and bell pepper. Season it with salt, pepper, and herbs de Provence. Add the tomato sauce and the red lentils. Simmer it for 10 minutes to reduce the liquid. Place it on top of the cauliflower. Stir fry the zucchini and place it on top the bell pepper/lentil mix. Distribute on top some cheese. Bake it for 10 minutes, or until the cheese has melted. ENJOY!!
 


Bell peppers filled with rice, Swiss chard, and mushrooms

I had left over rice, some Swiss chard from my backyard, a left over sautee mushrooms...and voila!!....mix all together, add some garlic and fill the bell peppers....then to the oven for 20 minutes....ready and delicious to eat!!
