I love dumplings, and I always make the dough at home; however, we invited a friend for dinner who is celiac, and I ended adapting my dumpling recipe with an gluten free option.
Mushroom and Prawn "dumplings" (gluten free)
Rice paper wraps
200g medium raw prawns peeled
100 grams of mushroom previously cleaned
100 grams of green cabbage
7g fresh root ginger finely chopped
7 chives sliced (3 mm)
1 tablespoon toasted sesame oil
2 tablespoons rice wine
2 tablespoons soy sauce
2 teaspoon of cornstarch
In a food processor, place all the ingredients and mix them for 1or 2 minutes until they are finely chopped. In a pan, place some oil and cook this mix. Add the cornstarch to make it thicker. Let it cool.
Place a tablespoon in the center of a rice paper wrap previously soaked for 30 seconds. Fold it, and stir fry it for 2 minutes each side until it gets crispy. Serve it with your favorite dumpling sauce. Enjoy!
