Facturas....desayuno de Argentina

 


Amo Argentina....y también amo las facturas!!

Las facturas son unas pastas dulces que se comen a la hora del desayuno. Se elaboran con una especie de medio hojaldre dulce y esponjoso. Se rellenan con dulce de leche, membrillo o crema pastelera de vainilla.

Pudimos desayunarlas durante el fin de semana recordando nuestros viajes a Argentina.

Facturas

Masa

500 gramos de harina
3 cucharaditas de levadura instantánea
1 huevo
50 gramos de azúcar
250 gramos de leche fría
200 gramos de mantequilla
2 cucharadas de miel

Mezcle todo junto (excepto la mantequilla) hasta obtener una masa suave y tersa. Dejar reposar a temperatura ambiente durante 1 hora. Con un rodillo haz un rectángulo, y reparte la mantequilla por la mitad. Dóblelo y trabaje como si fuera una masa de hojaldre. Hay que dar 4 vueltas con intervalos de 20 minutos en la nevera para relajar la masa y evitar que se escape la mantequilla.

Haz un rectángulo y corta piezas para hacer las formas. Es difícil explicar cómo hacer las formas, pero puedes encontrar muchos videos en youtube. Dejar reposar durante 1 hora. Mientras tanto, haz una crema pastelera de vainilla que pueda servir para el horno.

Crema pastelera de vainilla para el horno

500 ml de leche
2 huevos
40 gramos de harina
60 gramos de maicena
280 gramos de azúcar
1 cucharadita de pasta de vainilla

Mezclar todo y cocinar a fuego medio hasta que espese. Deja enfriar.

Cuando las facturas hayan duplicado su tamaño, rellénalas con la crema pastelera de Vainilla. Hornee en un horno precalentado a 365F durante 15 minutos o hasta que estén doradas. Al sacarlos del horno, pincelarlos con un almíbar casero básico o mermelada de albaricoque. Usé mermelada casera de albaricoque. ¡¡DISFRUTAR!!

I love Argentina....and I love facturas too!!

Facturas are sweet pastries that are eaten at breakfast time. They are made  with a sweet, fluffy, kind of half puff pastry. They are filled with “dulce de leche”, "membrillo" (quince), or vanilla custard cream.

We could eat them for breakfast during the weekend remembering our trips to Argentina.

Facturas

Dough

500 grams flour
3 teaspoons instant yeast
1 egg
50 grams Sugar
250 grams cold milk
200 grams Butter
2 tablespoons honey 

Mix everything together (except the butter) until you have a smooth soft dough. Let it rest at room temperature for 1 hour. With a rolling pin make a rectangle, and distribute the butter in the half. Fold it, and work it as you would made puff pastry. You have to make 4 turns with intervals of 20 minutes in the fridge to relax the dough and to avoid the butter to escape.

Make a rectangle and cut pieces to make the shapes. It is difficult to explain how to make the shapes, but you can find many videos in youtube. Let it rest for 1 hour. In the meantime, make a vanilla custard cream that can be used for the oven.

Vanilla custard cream for the oven

500 ml of milk
2 eggs
40 grams of flour
60 grams of cornstarch
280 grams of sugar
1 teaspoon vanilla paste

Mix all together, and cook it at medium heat until it thickens. Let it cool.

When the facturas has doubled in size, fill them with the Vanilla custard cream. Bake them in a preheated oven at 365F for 15 minutes or until golden brown. When you take them out of the oven, brush it with a basic home made syrup or apricot jam. I used home made apricot jam. ENJOY!!

Pastel Italiano de manzana

  







Tuvimos un Día de Acción de Gracias muy agradable. Para el postre, probé una nueva receta de un pastel de manzana Italiano con natillas de vainilla... ¡estaba delicioso!... esta receta fue adaptada de Ricette Dolci


Pastel Italiano de manzana 

Masa

300 g de harina

80 g de azúcar

una pizca de sal

ralladura de un limon

1 huevo

200 g de mantequilla

manzanas

3 manzanas

40 g de mantequilla

2 cucharadas de azúcar

media cucharadita de canela

Para la crema pastelera

45 g de azúcar

260g de leche

20 g de maicena

2 huevos

1 cucharada de esencia de vainilla


Mezcla los ingredientes de la crema pastelera de vainilla, y cuécela a fuego medio-bajo hasta que espese. Dejar de lado.


Masa: Mezclar el azúcar con la ralladura de limón y la mantequilla. Añadimos el huevo, y poco a poco añadimos la harina con la sal. Agregue agua si es necesario. Colócalo en un molde para pastel previamente engrasado, y déjalo en el refrigerador por 30 minutos. Hornee por 15 minutos en un horno precalentado a 365F. Dejar de lado.


Pelar las manzanas y trocearlas. En una sartén, caliente la mantequilla y agregue las manzanas. Espolvorea con el azúcar y la canela. Cocínalo solo por 3 minutos.


Coloque las manzanas sobre la masa de pastel que está a medio cocinar. Encima colocar la crema pastelera de vainilla. Hornéalo a 365F por 25 minutos o hasta que esté dorado. ¡DISFRUTAR!









Italian Apple Pie

 







We had a very nice Thanksgiving. For dessert, I tried a new recipe of an Italian apple pie with vanilla custard....it was delicious!...this recipe was adapted from Ricette Dolci

Italian Apple Pie

Dough

300 g of flour 

80 g of sugar

a pinch of salt

zest of one lemon

1 egg

200 g of butter

Apples

3  apples

40 g of butter

2 tablespoons of sugar

half a teaspoon of cinnamon

For the custard cream

45g sugar

260g of milk

20g cornstarch

2 eggs

1 spoon of vanilla essence

Mix the vanilla custard cream, and cook it at medium-low heat until it thickens. Set aside.

Dough: Mix the sugar with lemon zest and the butter. Add the egg, and slowly add the flour with the salt. Add water if needed. Place it in a pie mold previously greased, and leave it in the fridge for 30 minutes. Bake it for 15 minutes in a preheated oven at 365F. Set aside.

Peel the apples and slice them. In a pan, heat the butter, and add the apples. Sprinkle it with the sugar and cinnamon. Cook it only for 3 minutes.

Place the apples on the pie dough that it is half way cooked. On top place the vanilla custard. Bake it at 365F for 25 minutes or until golden brown. ENJOY!

Postre de Melocotones y Mascarpone

   







Con unos melocotones hice mermelada de melocotones que es una de mis mermeladas favoritas. Ahora puedo hacer un postre que me recuerda al verano. Este postre está adaptado de Bavette-Gastronomia. La receta original es con frambuesas. Olvidé tomar una foto del interior, pero es un postre que tiene una parte media con un relleno de mousse de melocoton, cubierto con una mezcla de melocoton con mascarpone.

Relleno de mousse de melocoton
3 gramos de hojas de gelatina
120 gramos de crema para batir

Montar la nata, y mezclarla con los melocotones y la gelatina previamente remojada y derretida en una pequeña cantidad de agua tibia. Colocarlo en molde de silicona de media bola. Congélalo durante 3 horas.

Mezcla de Mascarpone y Melocotón

160 gramos de queso mascarpone
320 gramos de crema espesa
80 gramos de azúcar
3 yemas de huevo
8 gramos de hojas de gelatina remojadas en agua fría

Calentar la crema espesa. Batir la yema de huevo con el azúcar, y agregar la nata tibia poco a poco. Cuécelo todo junto hasta que espese. Agrega la gelatina. Dejar enfriar hasta 60C, y añadir el mascarpone y la mermelada de melocotón. Mézclalo bien.

En moldes de silicona, colocar la mezcla de mascarpone melocoton  hasta la mitad, luego una bola de relleno de mousse de melocoton, y terminar con la mezcla de mascarpone melocoton. Colóquelo en el congelador durante 4 horas. Desmoldar y servir con coulis de melocotón. ¡DISFRUTAR!


Mascarpone Peach Dessert

  







With some peaches, I made peaches' jam that is one of my favorite jams. Now I can make dessert that reminds me of summer. This dessert is adapted from Bavette-Gastronomia . The original recipe is with raspberries. I forgot to take a picture of the interior, but it is a dessert that has a middle part with a peach mousse filling, covered it with mascarpone peach mixture.

Peach mousse filling
100 grams of homemade peaches' jam
3 grams of gelatin leaves
120 grams of whipping cream

Whip the whipping cream, and mix it with the peaches and the gelatin that has been previously soaked and melted in small amount of warm water. Place it in silicone half ball mold. Freeze it for 3 hours.

Mascarpone Peach mixture

160 grams of mascarpone cheese
320 grams of heavy cream
80 grams of sugar
3 egg yolks
8 grams gelatin sheets soaked in cold water

Heat the heavy cream. Beat the egg yolk with the sugar, and add the warm cream slowly. Cook it all together until it thickens. Add the gelatin. Let it cool until 60C, and add the mascarpone and the peach jam. Mix it well.

In silicone molds, place the Mascarpone Peach mixture until half, then a ball of Peach mousse filling, and finish with Mascarpone Peach mixture. Place it in the freezer for 4 hours. Unmold it, and serve it with peach coulis. ENJOY!

Pan tipo croissant

 



Este pan lo vi en youtube, y tenia que hacerlo......es un pan suave, sabroso, delicioso!!.....Estoy enamorada de este canal de youtube

Hice la mitad de la receta, y disfrutamos mucho este pan. La próxima vez lo haré a la mitad porque me quedan muy grandes.

Pan tipo croissant

Esta es la mitad de la receta.

315 g de harina para todo uso

1 huevo

80gr de agua

80 gr de leche

40 gr de aceite de cocina

30 gr de azúcar

4 gr de levadura seca instantánea(1 cucharadita)

3 gr Sal (1/2 cucharadita)

40 gramos de mantequilla

1 huevo para pintar antes del horno

Bate el huevo, y mézclalo con agua y leche. Sigue mezclándolo. Agregue azúcar, levadura instantánea y sal. Mézclalo bien. Agregue el aceite, mezcle bien. Agregar la harina y amasar. Déjala leudar por 30 minutos, y con las manos con aceite, dóblala por los 4 lados. Déjalo reposar durante 30 minutos y repite el plegado con tus manos aceitosas. Cúbralo y déjelo crecer durante 2 horas.

Sobre una mesa con aceite, aplanar la masa en un rectángulo, y agregar la mantequilla. Dóblalo en tercios por el lado más largo (puedes ver el video). Coloque la mantequilla por la mitad y dóblela por la mitad. Divídalo en tres partes (la receta completa es para 6 panes). Dobla cada pieza por la mitad y déjala reposar durante 10 minutos. Gíralo y haz un círculo y ata los extremos. Dejar reposar tapado en un lugar cálido durante 2 horas. Pintarlo con huevo batido, y espolvorear unas semillas (en mi caso semillas de amapola) por un lado. Hornéelo durante 20 minutos o hasta que esté dorado a 365F. Lo comí con mi mermelada de durazno casera.

I saw this bread in youtube, and I had to make it......it is a soft, tasty, delicious bread!!.....Im in love with this youtube channel

I made half of the recipe, and we really enjoyed this bread. Next time, I will make it half size because they end up being very big.

Croissant like bread

This is half of the recipe

315 g all purpose flour 

1 egg

80 gr of water 

80 gr of milk

40 gr cooking oil 

30 gr sugar

4 gr instant dried yeast(1 tsp)

3 gr Salt (1/2 teaspoon) 

40 grams of  butter

1 egg for brushing before the oven

Beat the egg, and mix it with water and milk. Continue beating it. add sugar, instant yeast, and salt. Mix it well. Add the oil, mix it well. Add the flour, and kneed it. Let it rise for 30 minutes, and with your hands with oil, fold it 4 sides. Let it rest for 30 minutes, and repeat the folding with your oily hands. Cover it, and let it rise for 2 hours.

On an oily base, flatten the dough in a rectangle, and add butter. Fold it in thirds by the longest side (you can watch the video).  Place butter in one-half and fold it in half. Divide it in three pieces (the full recipe is for 6 breads). Fold each piece in half, and let it rest for 10 minutes. Twist it and make a circle and tie the ends. Let it rest covered in a warm place for 2 hours. Brush it with a beaten egg, and sprinkle some seeds (in my case poppy seeds) on one side. Bake it for 20 minutes or until golden brown at 365F. I ate it with my home made peach jam.

Pasta con salmón y rúcula

 



Donde quiera que vivo, planto verduras y frutas... ¡Me comí mis propias alcachofas plantadas en Canadá!... Aquí siembro todo lo que puedo en macetas... La rúcula es muy fácil de cultivar y es una adición deliciosa para un buen plato de pasta

Pasta con salmón y rúcula
masa
1.5 tazas de harina 00
1/2 taza de sémola
2 huevos
2 cucharadas de aceite de oliva
agua según sea necesario.

Mezclar todos los ingredientes hasta tener una masa tersa y suave. Dejar reposar tapado durante 30 minutos. Pasa la masa por una máquina para hacer pasta italiana hasta el #6, y córtala como desees. Esta vez las cortamos anchas al estilo pappardelle.

Salsa
200 gramos de rúcula lavada y picada
2 chalotes
2 dientes de ajo
1/2 vaso de vino blanco
400 gramos de salmón en trozos
20 gramos de mantequilla
Sal
pimienta
Aceite de oliva
3 tazas de salsa bechamel
queso parmiggiano reggiano para ponerlo encima

En una sartén, caliente el aceite de oliva y saltee el ajo y las chalotas. Agregue la rúcula picada y saltee durante 5 minutos. Agrega la mantequilla y los trozos de salmón, y saltéalos durante 5 minutos. agregue el vino y déjelo hervir a fuego lento durante 3 minutos. Mézclalo con la salsa bechamel, y mézclalo con la pasta fresca cocida...... ¡DISFRUTA!

Wherever I live I plant vegetables and fruit.....I ate my own planted artichokes in Canada!...Here I plant everything I can in pots....arugula is very easy to grow, and a delicious addition for a good pasta dish

1.5 cups of flour 00
1/2 cup of semolina
2 eggs
2 tablespoon of olive oil 
water as needed.

Mix all the ingredients until you have a smooth and soft dough. Let it rest covered for 30 minutes. Pass the dough through an Italian pasta maker until #6, and cut it as you wish. This time we cut them wide in pappardelle style.

Sauce
200 grams arugula washed and chopped
2 shallots
2 garlic cloves
1/2 glass of white wine
400 grams of salmon in pieces
20 grams of butter
Salt
pepper
Olive oil
3 cups of Bechamel sauce 
parmiggiano reggiano cheese to put it on top

In a pan, heat the olive oil and sautee the garlic and shallots. Add the chopped arugula, and sautee them for 5 minutes. Add the butter and pieces of salmon, and sautee them for 5 minutes. add the wine, and let it simmer for 3 minutes. Mix it with the béchamel sauce, and mix it with the fresh cooked pasta......ENJOY!

Ravioles de Espinaca

 


Me encantan los raviolis, y siempre los hago frescos. No tengo la cantidad exacta para el relleno ya que aprendí a hacerlo por olor y color. Sé que el relleno es correcto por el aroma a orégano y ajo, y el color muestra la presencia de espinacas y queso parmesano en partes iguales.

La salsa la hago con el relleno sobrante con un poco de leche y harina....como una bechamel ligera....

Raviolis

masa
1.5 tazas de harina 00
1/2 taza de sémola
2 huevos
2 cucharadas de aceite de oliva
agua según sea necesario.

Mezclar todos los ingredientes hasta tener una masa tersa y suave. Dejar reposar tapado durante 30 minutos

Relleno
300 gramos de espinacas lavadas, picadas y escaldadas
100 gramos de queso parmiggiano reggiano
40 gramos de ricota
2 dientes de ajo
2 cucharaditas de orégano

Escurrir muy bien las espinacas blanqueadas. Mézclalo con los ingredientes restantes. El relleno tiene que estar seco, y en caso de que esté aguado, hay que añadir queso parmiggiano reggiano en consecuencia.

Pasar la masa por una máquina para hacer pasta italiana hasta el #6. Usa un moldeador de ravioles para colocar la pasta y rellénala con el relleno. Hacer los raviolis. Cortarlos y cocerlos en agua hirviendo durante 6 minutos.

Haz una salsa bechamel ligera y mézclala con el relleno sobrante. Corregir de sal y ajo. Cocine a fuego lento durante 5 minutos. Sírvelo con los ravioles... ¡DISFRUTA!

Spinach Ravioli


I love ravioli, and I always make them fresh. I don't have the exact amount for the filling since I learned to do it by smell and color. I know the filling is right because of the aroma of oregano and garlic, and the color shows the presence of spinach and parmiggiano cheese in equal proportions.

I make the sauce with the leftover filling with some milk and flour....like a light béchamel sauce....

Raviolis

dough
1.5 cups of flour 00
1/2 cup of semolina
2 eggs
2 tablespoon of olive oil 
water as needed.

Mix all the ingredients until you have a smooth and soft dough. Let it rest covered for 30 minutes

Filling
300 grams of spinach washed, chopped, and blanched
100 grams o parmiggiano reggiano cheese
40 grams of ricotta
2 garlic cloves
2 teaspoons of oregano

Drain very well the blanched spinach. Mix it with the remaining ingredients. The filling has to be dry, and in case is watery, you need to add parmiggiano reggiano cheese accordingly.

Pass the dough through an Italian pasta maker until #6. Use a ravioli shaper to place the pasta and fill it with the filling. Make the raviolis. Cut them and cook them in boiling water for 6 minutes.

Make a light bechamel sauce and mix it with the leftover filling. Correct it for salt and garlic. Simmer it for 5 minutes. Serve it with the ravioli......ENJOY!
