Zucchini Flowers Filled Genovese Style......and Blessings for Mayte.....

Today, I wanted to dedicate my post to the wonderfuls awards I have received from my fantastic friends Kesito, Nadji, Fimere and Tito. However, I will do it later. Today, I want to dedicate these flowers and my recipe to our dear friend Mayte. She is a wonderful blogger, and a beautiful person that is having a difficult time. Mayte our blessings are with you!!........

The quantities of this recipe depends on the number of the flowers, and its size.

Beautiful Zucchini flowers (I had 15)
3 medium size potatoes
10 green beans
1 chopped garlic
2 tablespoon of ricotta
Parmiggiano reggiano cheese (grated)
Basil leaves
Salt
Pepper
Olive oil
Egg
Flour

Carefully wash the zucchini flowers, and dry them with a paper towel.

Cook the potatoes (peeled), and in another pot, also cook the grean beans. When the potatoes and green beans are cool, blend them in a food processor. Add chopped basil, salt and pepper.

Transfer this mix to a bowl. Add the ricotta, and add parmiggiano cheese until the mix is dry, but creamy. Put this cream in a plastic bag container, and fill each zucchini flower.

When they are filled, carefully close the petals.

Beat one egg, and place the flour in a dish. Pass each zucchini flower for flour, then egg, then flour again. Fry them in olive oil. Enjoy.

ENJOY!!
