Appetizers.....Seared Scallops with Quinoa .....Delicious!


Inspired by my Christmas' blinis, and because I love quinoa and scallops, I have made a colorful Scallops with Quinoa Appetizers

I will not put quantities, because I didn't measure all of them, but you can try with your  quinoa combinations

Seared Scallops with Quinoa Appetizers 

Beautiful big scallops
Salt
Olive Oil

With a paper towel dry the scallops, and season them with salt. In a hot pan with olive oil, cook them for 3-4 minutes, and flip them to the other side, cooking them for another 3-4 minutes. Set aside.



Tomato, Thyme, and Feta Sauce

2 ripe tomatoes (chopped)
Some feta
1 garlic
Chopped thyme
Olive oil
Salt
Pepper

In a pan, heat olive oil with garlic. Add tomatoes, salt, pepper, thyme, and simmer it for 5-7 minutes. You have to reduce  this tomato sofrito to a half. Add some feta, and heat it until is melted. Place a spoon of this mix over the scallop shell, and put a seared scallop on top. ENJOY!



Quinoa and Avocado

1/2 cup of quinoa (cooked)
1 avocado
Salt
Olive oil
Lemon drops
Chives (chopped)

Mash the avocado, and season it with olive oil, salt, lemon drops, and chives. Add the quinoa, and mix it. Place a spoon of this mix over the scallop shell, and put a seared scallop on top. ENJOY!


Quinoa and Roasted Bell Peppers


1/2 cup of quinoa (cooked)
1 yellow pepper (roasted)
1 red pepper (roasted)
Salt
Olive oil
Oregano

Chop the yellow and red bell peppers in small pieces. Add the quinoa, and mix it. Season it with salt, olive oil, and oregano. Place a spoon of this mix over the scallop shell, and put a seared scallop on top. ENJOY!
