Vanilla Flan Tarte




Happy Mother's Day! In NorthAmerica we celebrate Mother's Day on May 10th.

I had some eggs that were about to expire, and I found this recipe from the Chef Bruno Albouze. If you don't know him, then you are missing a lot of creative, healthy and great recipes....

750 g of whole milk 
250 g  cream 
2.5 g vanilla paste
230 g of sugar
150g whole eggs (3 eggs in my case)
60g Egg yolks (3 eggyolks in my case)
80 g cornstarch

In a saucepan, heat the milk, cream, and vanilla at low heat for 7 minutes. In a bowl, beat the eggs with yolks and sugar. until they are creamy. When it is well combined, add the cornstarch. Incorporate the hot mil into the egg/sugar/cornstarch mixture and mix them well. Put it in a saucepan, and cook at medium high heat until it thickness. Let it cool.

I had some frozen dough leftover from my strawberry tarte (pasta sable). Cut rings and make the circles. In my case, I cover the whole mould. I froze it for 1 hour before baking it. Baking 15 min at 375ºF. Let it cool.

Fill the mold with the flan, and bake it in a preheated oven for 45 minutes. Let it cool before serve it. It was delicious! ENJOY!
