I love to bake cookies....I love to eat them more. Here I have three cookies that are easy to make and I do them at the same time to get a good use of the oven energy.
Coconut cookies
200 grams of grated coconut without sugar
100 grams all purpose flour
110 grams of butter at room temperature
120 grams of granulated sugar
1 teaspoon coconut essence
1 egg at room temperature
1 teaspoon of baking powder
Water as needed
Mix the egg, butter and sugar until you have a creamy mixture. Add the coconut, flour, coconut essence, and baking powder. Add water if needed. With a teaspoon, place portions over parchment paper. Bake at 325F in a preheated oven until they are golden brown (10-12 minutes).
Almond cookies
250 g of all purpose flour
150 g of ground almonds
120 g of sugar
1 pinch of salt
110 g butter in small pieces
1 egg
1 teaspoon of almond essence
1 teaspoon of baking powder
Water as needed
Mix the egg, butter and sugar until you have a creamy mixture. Add the almond, salt, flour, almond essence, and baking powder. Add water if needed. With a teaspoon, make a ball in your hands, place portions over parchment paper, and flatten them with a fork to make the print. Bake at 325F in a preheated oven until they are golden brown (12-14 minutes).
Oatmeal cookies
3 cups of oatmeal
1 cup of flour
3 eggs
1 teaspoon of baking powder
1/2 cup of sugar. I don't use much sugar since I use dry fruit
2 cups of a mix and chopped raisins, dry figs, dry apricots, and dates.
1/2 cup of sliced almonds, or pieces of walnuts
1 teaspoon of vanilla essence
Water as needed
Mix the egg,and sugar until you have a creamy mixture. Add the dry fruit, almond or walnuts, oatmeal, flour, vanilla essence and baking powder. Add water if needed. With a tablespoon, place portions over parchment paper. Bake at 325F in a preheated oven until they are golden brown (14-16 minutes).
So many yummy cookies! The more, the merrier :-)) Coconut one is my favourite.
