For the first time, I made "pan de calatrava", and the recipe I used was not a good one. The result was a cooked flan, but not firm. The original recipe, in my opinion, needed to add an extra egg. Therefore, I use this tasty base, I mixed it with my ice cream base, I added 1/2 cup of chopped candied orange peel....and voila....a wonderful ice cream that I want to make again
Cala-ranja ice cream (calatrava and naranja)
400 g of milk
100 g of sugar
100 g of bread without crust and in pieces (from the previous day)
4 eggs
1 teaspoon of vanilla
Mix all together, and place it in a caramelized baking pot. Bake it at 375F until is fully cooked (45 minutes). It will not be firm, but it will be cooked. Let it cool.
Ice cream base
1 eggs
240 grams of cream (35%)
120 grams of milk
2 tablespoons of milk powder
Mix everything, and cook it at medium low heat until is thick. Let it cool.
Mix both and add 1/2 cup of orange candied peel. Put it in your ice cream machine and enjoy!
Really creamy and yummy! A perfect summer cooler :-)
