Lemon, cardamom and almond cookies
250 gr of almond flour 50 gr of flour
140 gr of fine sugar
1 lemon zest
2 pods of ground cardamom 1/2 teaspoon baking powder
Mix sugar, egg, lemon zest, ground cardamom. Add almond flour and flour with the baking powder. If you need, add water. Make a cylinder and freeze. Cut into 1cm cylinders and bake for 10 minutes at 350F.
Lemon curd cookies
140 g of fine sugar
Zest of 2 lemons
Juice of 2 lemons
50 g of butter 2 medium eggs
260 g of flour 2 teaspoons of baking powder
Mix the butter, lemon zest, lemon juice and sugar. Bring to medium heat. Add the eggs and beat to avoid cutting. Return to the fire and make a lemon curd. Let cool. Add flour and baking powder. Leave in the refrigerator for 1 hour. Make balls and go through sugar glass. Bake for 10 minutes at 350F.
Walnut cookies with jam
60 g of butter at room temperature
50 g of sugar
1 teaspoonful of liquid vanilla
140 g flour
60 g chopped walnuts 1/2 teaspoon baking powder
cherry jam or whatever you have
Mix the butter with sugar, vanilla and egg. Add flour, baking powder and nuts. Mix and refrigerate for 1 hour. Make balls and make a hole with one finger. Put a little jam. Bake for 10 minutes at 350F.
