Eggplant Fatteh


This weekend was a Mediterranean Mezze with a lot of garlic.....Simple and tasty dishes were present in our table

Eggplant Fatteh

1 big eggplant

1/4 cup olive oil
1 teaspoon of turmeric
1 cup of Greek yogurt drained
6 garlic cloves
3 tablespoons of olive oil
dry mint to garnish

Wash and cut the eggplant in small cubes. Place it in a oven dish with olive oil, turmeric and salt. Bake it at 400F for 30 minutes. You can air fry them too. Once they are cooked, set aside.

In a mortar, mash the garlic (you can use more) with salt and olive oil. Mix it with the yogurt. Spread it on the eggplant, and sprinkle with dry or fresh mint. Serve it with pita bread. ENJOY!!
