This is a simply tasty dish!....and it is done in few minutes....
Aji de Gambas
1 onion chopped
3 garlic cloves chopped
1/2 teaspoon of turmeric
2 teaspoons or more of aji amarillo
1 can of evaporated milk
4 slices of bread or more
White rice boiled
Wash and peel the prawns. Cook the shell of the prawns in 1/2 cup of water and set aside.
Soak the bread in the evaporated milk. Set aside.
In a pot, heat the olive oil, and sear the prawns. Take the prawns out of the pot. Add the onion and garlic, and cook them at medium heat until they are translucent. Add the turmeric, salt and pepper. Add the water of the cooked prawn shells. In a blender, puree the bread with evaporated milk until it is creamy, and add it to the pot. Add the aji amarillo, and correct it for salt and aji. Add the prawns, and cook them for another 5 minutes or until they are cooked. Serve it warm with white rice and bloiled eggs. ENJOY!!
