Summer has arrived, and as such.....the season of Peruvian Causa. I love Peruvian food, specially the one I can make with what I have in the fridge.
Peruvian Causa
8 boiled potatoes
Lemon juice, half onion chopped, salt, 2 garlic cloves chopped
aji amarillo in paste
Mayonnaise
For the filling
Avocado, shrimp, white cheese, hard boiled eggs, chicken
To decorate
Avocado and black olives
Mix the onion and garlic with lemon juice. Season it with salt. Set aside for 10 minutes.
Mash the potatoes. Mix it with the onion/garlic mixture. Add mayonnaise to the mix and aji amarillo. The amount varies. It has to be a firm sour and spicy mashed potatoes. Place a layer of potatoes, and then a layer of avocado, then a layer of shrimp with mayonnaise (you can use cooked chicken, fresh cheese or hard boiled eggs), then an layer of potatoes. On top, you can put some avocado and olive oil for decoration. ENJOY!!
