I love empanadas, and you can filled them with everything. Usually, I like my oven empanadas with vegetables, and my fried empanadas with a cheese filling.....
Oven empanadas
Dough
500 grams of flour
125 grams of butter
1 egg
2 tablespoons of white wine
1 teaspoon salt
very hot milk
Mix all the ingredients except the milk. You have to end up with a sandy texture mix. Add the very hot milk (be careful with burns) until you have a dough that is soft and pliable.
Filling. I also use boiled eggs.
You can use spinach, swiss chard, or any other green vegetable. In this case, I used beetroot leaves.
1 onion chopped
3 garlics chopped
1 teaspoon of fresh grinded cumin
1/2 teaspoon of oregano
300 grams of beetroot leaves washed and chopped
salt
olive oil
In a pan, heat the oil and add the onion and garlic. Cook them until they are translucent. add the beetroot leaves, and cook it for 4 minutes. Add the cumin, oregano, and correct it for salt. Set aside.
With a rolling pin, flatten the dough until you have 3-5 mm of thickness. Cut them in circles. Place a tablespoon of filling, a half of boiled egg, fold and seal it.
Brush it with either olive oil or milk. Bake it in a preheated oven for 25 minutes or until golden brown. ENJOY!
Fried empanadas
Dough
1 cup of flour
1 tablespoon butter
1 tablespoon white vinegar
1/2 cup of water with 2 teaspoons of salt
Mix everything except water. Add salted water little by little to form a dough. Knead and leave in to rest for 1 hour.

Boiled shrimps
Onion in julienne caramelized

450 grams of cheese. I used a combination of havarti and colby cheese, but any cheese for melting would work.
1 cup of milk
3 tablespoons of cornstarch
Grated the cheese. At medium low heat, melt the cheese. Once it is melted, add the mixture of milk and cornstarch. Let it cook stirring continuously until you have a cream. Let it cool.
Stretch with rolling pin until you have a thickness of 2-3mm. Cut it in circles, place the filling (a tablespoon of cream cheese, some caramelized onions, and 2 or 3 shrimps), and fry them in hot oil. ENJOY!
Both are GREAT, but I bet the pan fried one is more addictive :-)

ReplyDeleteI've never attempted to make empanadas, but my next door neighbor is from Cuba and she makes them every time she has a get together or party and they are delicious. Your look great..
