Brown Butter and Porridge Sourdough Bread

I found this bread in Instagram ....I made it immediately!!....delicious and with a soft texture!!

Brown Butter and  Porridge Sourdough Bread

I adapted the recipe since the original use flaxseeds too. I only used oats.

360g Bread Flour 

270 g Water 
70g  sourdough starter
10 g Salt 

50 grams of oats
50g Milk 
20g Butter

First, make the oat porridge. Melt the butter, add the oats, and once it is brown add the milk. Simmer it until all milk is absorbed. Set aside.

Mix flour with water. Let it autolyse dor 30 min. Add the starter, along with the salt, and kneed it well. Let it rest for 45 minutes. add the porridge, and stretch and fold. Repeat stretch and fold 4 times every one hour. Shape it, spray it with water, and roll it over oats. Place it in a banneton overnight. Score and bake it for 30 minutes at 515F. ENJOY!!
