We liked our Danish cheese cream, but it was quite heavy because of the cream cheese. We made a lighter version with vanilla cream and fruit, and we loved it!
Vanilla Cream and Fruit Danish Pastry
Vanilla Cream Filling
90g sugar
400g milk
45 g cornstarch
3 eggs
1 tbsp vanilla
Mix all together, and cook it in a pot stirring well until it thickens. Set aside.
Fruit: blueberries and strawberries.
Wash the blueberries, and place them in a small pot with water (80 ml) and sugar (2 tablespoons), and simmer them for 2 minutes. Set aside.

Take each danish pastry dough square, fold the corners to the center, place a generous amount of vanilla pastry cream, and on top pieces of fruit. Place the danishes on a warm area for 2 to 3 hours or until they are double in size. Once they have reached the size, bake them in a preheated the oven to 180C (356F). ENJOY!!
So flaky, buttery and absolutely irresistible with vanilla cream!
