I had lots of basil this year from my garden. My freezer is full of pesto!....I know....I will be making pasta with pesto, risotto, minestrone, panini, and so on....
I had my last basil bunch, and I didn't want to make more pesto. A friend told me that she makes Basil's salt....I made it.....and I'm amazed....it is delicious!!
Basil's salt
You have to wash and dry the basil. Then, you weight it. The proportion is 2:1...2 parts of salt 1 part of basil
160 grams of basil
320 grams of coarse salt
4 garlic cloves
Place the basil, salt, and garlic in a blender or food processor. Blend it very well until you have a smooth and homogeneous paste. Place it over parchment paper, and bake it at 150F for 5 minutes.
Then rotate it. I used a total of 15 minutes (2 rotations), and I turned off the oven. After two hours, I touch it and it was dry. Take pieced and put them it in a clean coffee grinder to grind them. Place it in a clean glass container.....it is a super delicious salt!....I will be making more herb's salt with the herbs from my garden. I made a caprese salad with tomatoes, mozzarella and basil's salt....ENJOY!!

ReplyDeleteI have never heard of Basil’s salt, but I envy you all the pesto, and I kick myself. We had a bountiful crop of basil this year and used but a fraction of it. We could easily have made pesto!
