Every time I make floating islands, I end up with meringue leftover. I always use it to make something else, and this time I made coconut cookies.....they ended up delicious!!
Coconut cookies
Meringue leftover from floating islands
1 teaspoon baking powder
120 grams dry coconut grated
100 grams of flour
1/2 teaspoon of coconut essence.
Add the coconut essence as well as the baking powder, and mix it well. Incorporate the grated coconut and the flour. With a teaspoon, place portions over parchment paper. Bake them in a preheated oven at 165C for 10-12 minutes. ENJOY!

ReplyDeleteThese cookies look wonderful. I was checking your other post how you made floating island. It was interesting to find how you cook them. I don't like the raw smell of whites either.
