I was preparing many dishes for celebrating Chinese New Year, as well as taking pictures that I forgot to take a picture of the dish itself....anyway!....we enjoyed it!
I always use vegetables that I have in the fridge, but this is the first time that I use cabbage as one of the main ingredients. I love cabbage, and I never thought of using it. However, I read that it is one of the ingredients to stir fry noodles for the Chinese New Year. I have to admit that it gave the dish another level of flavor, and I loved it!
Chinese Noodles with vegetables and shrimps (dry and fresh)
6 Cantonese-Style Noodle Nests
Vegetables that you have in the fridge in small pieces. In my case:
2 zucchini
1 yellow bell pepper
1 red bell pepper
3 carrots in slices and blanched for 3 minutes
1/2 small cabbage chopped
200 grams of mushrooms
200 grams of shrimps
3 tablespoons of dried shrimps.
6 garlic cloves
2 pieces of ginger
1 tablespoon of oyster sauce
1 tablespoon of dark soy sauce
1 tablespoon of fish sauce
Oil of your preference
Mix the sauce in a dish, and set aside.
Chop ginger and garlic together, and set aside.
Place the dried shrimps, and add 1/2 cup of boiling water. Set it aside for 30 minutes, and strained it.
Once you have everything chopped, it is fast and easy.
Boil the noodles for 5 minutes, and strain it. Set aside.
In a wok, place some oil and heated it. Add 1 teaspoon of ginger garlic paste, and add the cabbage, yellow and red bell pepper, and carrots. Sir fry it for 4 minutes. Add 1 teaspoon of ginger garlic paste. and add the zucchini along with the shrimps. Stir fry it for 3 minutes. Add the remaining garlic ginger paste, and add both shrimps. Stir fry it for 3 minutes or until the shrimps are cooked, but not over cooked. Add the noodles, incorporate the sauce mix, and stir it for 3 minutes. Serve it and ENJOY!!




That is a wonderful filling stir fry. I have never used dried shrimps. Do they taste similar?
ReplyDeleteI miss dried shrimps..using cabbage in noodle stirfry is great. At home, you don't dice them when doing noodle stirfry. My mom usually shred veggies..thin and long..just like noodles.
ReplyDeleteWe do a shrimp stir fry that is quite similar. As you say it’s a great way to use up vegetables left in the fridge, and that ensures variety, too.
