Still I have tomatoes, and along with my herbs and with fresh farm eggs that I buy from Fresh Egg Co. (fresheggco.com), they are part of my weekend's breakfast that it is usually made by my husband.
Egg with tomatoes and herbs
2-3 tomatoes in dices
3 garlic cloves sliced
chopped herbs. I use oregano, cilantro, parsley, chives.
In a pan, warm olive oil and sautee the garlic, tomatoes and herbs. When they are half cooked, add the eggs. In medium low heat, cook only the egg white. Then, start breaking and cooking each egg yolk incorporating them with the egg white, When you have the last raw egg yolk, turn off the heat. With the remaining heat, cook the las egg yolk; thus, you will have a creamy result. Add more fresh herbs, and serve it with fresh sourdough bread. ENJOY!
