Calamari filled with shrimps and mustard sauce



I love calamari, and it is not easy to find them fresh...Yes....I know they are sold frozen, but I prefer fresh ones....luckily, I found a person who brings them fresh (once in a while....) to the place I live.....

Calamari filled with shrimps with mustard sauce

There is no exact amount for this recipe since it varies depending on the size of the calamaries

Calamaries 
shrimps
3 garlic cloves chopped
fresh oregano, or parsley, or cilantro, or chives....any green herb will work
salt
pepper
olive oil

Chop the shrimps in pieces that can be used for the filling. Sautee them in olive oil and garlic. Set aside, and add the herbs, salt and pepper. When they are cool, fill the calamaries and use a toothpick to close them. Sautee them in olive oil 3-4 minutes per side or until they are well cooked. Serve them with white rice, and mustard sauce......and with a glass of white wine!!....ENJOY!

My mustard sauce is very simple. I make a bechamel sauce, and I add dijon mustard until I found is spicy enough for my taste.
