I know what my Indian friends are going to say.....Kulfi is an ice cream!!...and I agree with that definition. However, I made Indian food for a group of friends, and I didn't want to make kheer, rasmalai or gulab jamun. Therefore, I converted my Pista Kulfi ice cream, I added some cornstarch, and I ended up having a delicious and easy Indian dessert that was not cold, like an ice cream, for these days.
Pista Kulfi Pudding
220 grams condensed milk (more or less depending your sweet taste)
100 grams evaporated milk
1 cup heavy whipping cream
1/2 teaspoon vanilla essence
2 cardamom freshly grinded
1/2 cup pistachios grinded
few saffron strands crushed
2 1/2 tablespoons of cornstarch (more or less depending how thick you want it)
Pistachio for decoration
Mix all the ingredients in a pot, and at low heat stir it until the mix gets thicker. Distribute it in small glasses or cups. Place it in the fridge for at least 3 hours. Decorate it with some pistachio. ENJOY!!
They sound and look very inviting, ice cream or not.
