Noodles with Shrimps and vegetables

 


There is no Chinese New Year Celebration without noodles....

I took what I had in my fridge with the noodles that I found in my pantry, and voila.....we had noodles for longevity!


Noodles with Shrimps and vegetables

1 bell red pepper diced

2 carrots sliced

1 bunch green onions sliced

100 grams frozen green peas

2 eggs

200 grams shrimps

250 grams thick rice noodles

2 teaspoons curry powder

2 teaspoons fish sauce

1 tablespoon soya sauce

1 tablespoon oyster sauce

5 garlic cloves (chopped)

1 piece of ginger (grated)


In a hot wok with oil, stir fry some garlic and ginger, and add all the vegetables. Let it cook for 2-3 minutes. Set aside.


Add some oil, and stir fry the shrimps. Set aside. Add some oil and add the beaten eggs to scramble them. Set aside.


Follow the instructions for your noodles. I have to cook them for 5 minutes. Add oil to the wok, the remaining garlic and ginger, the noodles, curry powder, the remaining sauces, the vegetables, shrimps and eggs. Stir them for 1 minute. Serve it warm. ENJOY!
