I love rice and all its varieties. I found squid, and immediately I wanted to try this "paella" for a Sunday meal.
Squid Paella
425 g of fresh squid, cleaned and cut into pieces
120 g of crushed canned tomatoes
120 grams green peas (I used frozen)
1 teaspoon of paprika
370 g of round grain rice
740 g of fish stock
1 teaspoon of salt or more to taste
4 cloves of garlic
100 g of olive oil
2-3 pinches of saffron threads
Pour the oil into the paella pan and add the chopped garlic. Add the squid and cook for 5-7 minutes. Remove the squid.
Add the saffron and sauté for 3 minutes. Add the tomato, paprika and salt. Add the fish stock. When it starts to boil, add the rice and cook for 5 minutes on high heat, and 10-15 minutes on medium heat. Let it rest for 5 minutes and serve immediately. ENJOY!!

ReplyDeleteI do love all types of rice dishes but have yet to try paella. My husband and daughter had it in Valencia and they both really loved it. If I try what can I sub squid for?
ReplyDeleteHi Balvinder! you have many options for replacing squid. You can use mushrooms, vegetables, and chicken among others. However, proportions and cooking time might be different. There is a youtube channel that is very good and has many options for paella. You enter "paella" in this channel, and it will bring you different alternatives.
