Blueberry and Lemon Curd Gelato



And we are here....starting September.....this moving was not as easy as I expected, but here we are organizing our life in this beautiful new place!

In a new kitchen, I bought a new kitchen appliance....it is a gelato maker. Personally, I thought there will be no differences between ice cream and gelato maker, but I was so wrong!....the gelato maker produces a silky ice cream without pieces of crystal in between.....is pure heaven!!

I made this combination before as ice cream, but now my recipe is for the gelato.


Blueberry Gelato

3 eggs

450 grams of cream (35%)

200 grams of milk
80 grams of sugar
4 tablespoons of milk powder

Mix everything together and cook over medium low heat until thick. Let it cool. 

Blueberry confit
220 grams of  fresh blueberries
3-4 tablespoons of sugar
a dash of vanilla essence
zest of 1 lemon

Place everything together in a pot, and let it simmer for 5 minutes. Let it cool.

In a blender, place the custard with the blueberry confit. Place this mixture in the gelato maker for 30 minutes, or until gets the appropriate texture. Set aside in the freezer.

Lemon curd gelato

Lemon curd
180 grams of sugar
120 grams of butter
4 eggs
Juice of 4 big lemons
zest of 1 lemon
250 grams of whipping cream (35%)

Melt the butter, and add the sugar, lemon zest and the juice of 4 lemons. Mix it well at low temperature. Add eggs one by one, and increase the temperature a little bit to make the curd to thick it. Beat it constantly until is firm. Set aside. Let it cool.

Beat the whipping cream until is firm. Slowly combine it with the lemon curd. Set aside.

In a container, place a layer of blueberry gelato, and then a layer of lemon curd. Continue until you finish. Place it in the freezer for 4 hours. ENJOY!

    1. Hi Balvinder! the main difference between an ice cream and a gelato maker is that the last one use a compressor. Thus, there is no need to pre-freeze the bowl. The making time is about the same, but with less or same fat, you end up with a smooth and silky texture that has no ice crystals. My ice cream machine is over 10 years old. The gelato maker is more expensive, but for us it was a good investment because I make a lot of ice cream. I hope that explanation helps!
