Lavender and Vanilla Gelato




This gelato has a delicate fragrance and taste of lavender, and the vanilla enhances it!

It is soft, elegant, and not heavy at all. It is ideal for finishing a nice meal with friends!

Lavender and Vanilla Gelato

Custard
3 eggs
400 grams of cream (35%)
300 grams of milk
90 grams of sugar
3 tablespoons of milk powder

1 teaspoon of vanilla essence

1 teaspoon of dry lavender flowers


In a pot, place the lavender and milk, and simmer them for 30 minutes. Let it cool and strain it. Discard the lavender,

Combine with the rest of ingredients,  and cook it over medium low heat until it thickens. Let it cool. Place it in your gelato maker for 30 minutes, or until gets the appropriate gelato texture. Serve it with some lavender flowers on top (not too much). ENJOY!!

  3. I am actually not fan of eggs in Gelato but I guess this would be ok as you have cooked the eggs with milk.
