There are many type of rice dishes in the Indian cuisine that are a complete meal. Pulao are one of these type of dishes. we wanted to try a vegetarian version, and we love it!....It was the perfect combination to eat it with our paneer dishes......
Aloo Matar Pulao
Ingredients:
3 tbsp Oil
1 tsp cumin
1 tsp mustard seeds
4 pcs Cloves
2 cm Cinnamon
4 pcs Green cardamom
2 Bay leaf
3 Onions sliced
1 Green chillies chopped
1 piece of Ginger 2cm chopped
4 Garlic cloves chopped
5 small Potatoes diced
2 Carrots diced
3/4 cup frozen Green peas
2 small tomatoes sliced
1 tsp Garam masala
1b tsp turmeric
1/2 tsp Kashmiri chilli powder
1 teaspon freshly grinded cumin
1/2 teaspoon freshly grinded coriander seeds
1 ½ cup rice previously soaked
1 tsp Salt
3 tbsp Coriander chopped
Water as needed
In a pot, heat the oil and add the cumin, mustard seeds, cloves, cinnamon, green cardamom, and bay leaf. Let it simmer at low temperature for 5 minutes. Add the onions, green chilli, garlic, and ginger. Cook it until it is translucent. Add potatoes, carrots, tomatoes, and green peas. Add turmeric, kashmiri chilli, garam masala, cumin and coriander powder. Sautee them for 5 minutes. Add half cup of water, and let it simmer at low temperature for 6 minutes.
Add the soaked rice and chopped coriander, and add hot water to cover the rice. Let it cook at low temperature for 10-12 minutes, or until the rice is cooked. ENJOY!!
We will try this for sure. We are eating more vegetarian meals than ever and we favour Indian cuisine, so it’s a winning combination.
