I love to make strawberries pastries when they are in season...so sweet and aromatic are the strawberries now!
This Strawberry Tart Entremet is based on a recipe from Bruno Albouze
Strawberry Tart Entremet
Sugar Dough
260 g All purpose flour
70 g Powdered sugar
40 g Almond flour
150 g Butter room temperature
1 Egg
1 teaspoon of Vanilla paste
Pinch of Salt
Mix powdered sugar, flour, and almond meal. Set aside. Beat the butter, salt and vanilla paste. Add the egg. When everything is combined, add the flour-almond-sugar. Mix until you have a soft dough, but do not overwork it because of the butter. Olace it in the fridge for 1 hour.
With a roll pin, flatten the dough until 3-4 mm. Grease a tart mold, and place the dough. Leave it in the fridge for 30 minutes. Bake it for 20-25 minutes at 360F with parchment paper on top. and weight. I use beans. Take the pie out of the oven, and remove the weights. Set aside.
Almond cream Recipe
120 g Powdered sugar
200 g Almond flour
10 g corn starch
180 g butter room temperatute
3 each Eggs at room temp
1 teaspoon almond or vanilla essence
In a blender or food processor, combine all the ingredients except the butter. When everything is well mixed, add the butter.
Place this mix on top of the pie dough that is half cooked, and bake it in the oven at 365F for 30 minutes or until it is golden brown. Set aside, and let it cool. Place it in the fridge.
Soft Strawberry Jelly
200 g Strawberry
15 g Water
100 g Sugar
260 g Strawberries chopped
1 tbsp Lemon juice
3 1/2 Gelatin sheets silver quality
Soak gelatin sheets in cold water. In a blender or food processor, blend the 200 grams of strawberries with the sugar, and lemon juice. Warm it, and add the strained gelatine. Add the chopped strawberries, and bring it to boil. Place it in a mold that it is smaller than the almond pie. Place it in the fridge until next day.
Vanilla whipping cream
300 g whipping cream
1 teaspoon of Vanilla paste
1 Gelatin sheet softened in water and warmed
Sugar to taste
Whip the whipping cream with sugar, and vanilla. Add the dissolved gelatine. Set aside.
Montage
Place a layer of the Vanilla whipping cream on top of the pie. and place on top the strawberry jelly in the center of it. Decorate with fresh strawberries around it. Decorate the strawberry jelly with Vanilla whipping cream leftover. Place it in the fridge overnight. It is delicious. ENJOY!
