Gniudi






I had a ricotta package that it was about to expire. It was the perfect excuse to make Gniudi!

Gniudi

300grams fresh spinach
3/4 cup ricotta cheese
1 cup grated Parmesan
1 egg
00 flour as needed. I used less than 1/2 cup
2 garlic cloves finely minced
1/2 teaspoon of salt
Fresh grated nutmeg

For the Sauce
Olive oil
3 tbsp butter
6 sage leaves

Wash and sautee the spinach in olive oil. Set aside, drain and chop them finely. When it is cold, mix it with the ricotta, parmesan, egg, garlic, salt, and nutmeg. Add flour as needed to make a firm, but soft balls. Shape them in small balls with the help of teaspoons. Place them in boiling water, and take them out when they are floating. 

Warm some olive oil, and melt butter. Place sage leaves. Put the gniudis in this sauce, and warm them for 3 minutes. Place the gniudis on a plate, and serve them with grated Parmesan cheese on top. ENJOY!
