Zucchini Savory Cake


I saw this Zucchini Savory Cake on Instagram. I don't remember the page, and it was in Russian. The original version is made of zucchini layers as this one, but with a filling of cream cheese and smoke salmon.

I knew that I had to make it to use any leftover that I have in the fridge.

Zucchini Savory Cake

6 zucchini 
4 eggs
4 tablespoons of flour
1 teaspoon of salt
Olive oil

Wash and grate the zucchini, and add the salt. Leave it for 30 minutes. Strain it, and set aside, Don't discard the zucchini water.

Add the eggs, and the flour. Add some zucchini water to create a batter consistency.

Heat a pan, and add some olive oil. Place some zucchini batter, and fry it 2-3 minutes each side like a pancake. Repeat and set aside.

For the filling

Mayonnaise in every zucchini pancake, then one layer with mash avocado, one layer with burratta cheese and shrimps sautee with garlic, one layer with hard boiled eggs mixed with mayonnaise, one layer with pitted green olives, and then one layer on top.

You can use any filling: mushrooms, tuna, sardines, tomatoes, brie, camembert, and so on. Be creative. ENJOY!
