I have lots of basil, and my daughter was already asking for pasta with basil pesto. However, I wanted to try a new focaccia. The original has tomato pesto on top, but I decided to make it with basil pesto.
This focaccia is so good! after two days it is still soft and so delicious!
Focaccia with feta and black olives with pesto topping
Dough
3 cups bread flour
1½ cups warm water
2 tsp instant yeast
1 teaspoon of honey
1 1/2 tsp salt
3 tbsp olive oil
Filling
200 grams feta cheese in small pieces
150 grams black olives chopped
Pesto
150 grams of basil leaves
2 garlic cloves
60 grams of walnuts
70 grams parmiggiano reggiano grated cheese
3 tablespoon of olive oil
Pinch of salt
In a food processor or a blender, mix all together. set aside.
In a large bowl, mix the water, honey, and yeast. Let it foam for 10 minutes. Add the flour. salt, and olive oil. Knead it for 6 minutes, and let it rise for 1 hou.
Punch it to take the gast out, and add the feta and olives. Let it rise for 1 hour. take the gas out again, and place it in a rectangle mold that is for baking. Let it rise for 1 hour. Sprinkle water with olive oil, and bake it in a preheated oven at 470F for 20 minutes. Take it out, and brush it with pesto. ENJOY!
