Greens Savory Pie




I have been collecting greens from my vegetable garden, and when I have a mix of everything, I love to make a savory pie for eating with a salad, a piece of cheese, or some fish.

Greens Savory Pie

Dough

300 grams all purpose flour
150 grams of water
2 tablespoons of olive oil
1 tsp of salt

Filling

Variety of greens. I used spinach, swiss chard, leaves of beets, parsley, oregano, thyme, green onions, dill, cilantro.
2 chopped onions
2 garlic minced
150 grams of black olives pitted
160 grams of feta cheese crumbled
1 tsp salt
Olive oil

Wash and chop the greens. Set aside.
Warm olive oil, and sautee onions and garlic until they are translucent. Add the greens, and sautee them just for 1-2 minutes. Do not overcook them. Set aside. When it is cool, add the feta cheese, and mix it well.

For the dough, mix flour and salt, and add the water and olive oil. Kneed it until it is soft and smooth. Divide it in two pieces. With a roll pin, flatten it very thin., and brush it with olive oil. Place the greens mixture, and decorate on top with some black olives. With a roll pin, flatten the remaining dough very thin, and place it on top of the greens. Brush it with a mix of olive oil and water. Make a hole in the middle. Bake it at 375F for 20-25 minutes, or until golden brown. ENJOY!
