Croissant con Almendras y Lunas a la Vainilla....



Croissant aux Amandes (de mi libro realmente favorito Patisserie: Mastering the Fundamentals of French Pastry")

Masa

He hecho tres tipos de masa de croissant , esta es la que mas nos gusta ....

Hice el total de la masa , pero para  este croissant  sólo se utiliza 1/3. de esta masa y me salieron 14 croissants .... la masa restante ..... preparese ..... más pasteles venir !

500 gramos de harina todo uso
60 gramos de azúcar
10 gramos de leche en polvo
12 gramos de sal
100 gramos de mantequilla ( temperatura ambiente )
4 cucharaditas de levadura seca (yo usé subida rápida ) . La receta requiere 25 gramos de levadura fresca , pero no tengo aquí.
230 ml de agua fría
250 gramos de mantequilla ( fría )

Mezclar todos los ingredientes secos ( salvo la mantequilla fría ) en un bol, y añadir poco a poco el agua para amasar . Amasar hasta que este elástica y suave ( alrededor de 7 minutos ) a velocidad media . Aplanar la masa en un rectángulo, y coloque la mantequilla dentro. Cerrar esta masa. Cubra con una envoltura de plástico , y refrigere por 2 horas .



Siga el mismo patrón de estirado con uslero que el que aparece en Feullitage Inverse

Relleno de Almendras

90 g de almendras molidas
60 g de azúcar glas
1/2 huevo
35 g de mantequilla (blanda)
1 cucharada de maicena
1/2 cucharadita de esencia de almendra

Moler las almendras, y mezclar con el azúcar, la mantequilla, el huevo, la maicena y la esencia de almendra hasta obtener una pasta como una crema. Si falta humedad agregue mas huevo, si esta muy humeda agregue mas maicena.

Tome 1/3 de la masa, y rodar en un rectángulo. Cortar triángulos con una base de 5 cms. Ponga una cucharadita de pasta de almendra en la base. Cierre y ruede como se muestra en las fotos de abajo.





Pincelar con una yema de huevo, espolvorear un poco de azúcar y rodajas de almendras. Déjelo leudar durante 2 horas.


Precaliente el horno a 350 F, y cocine por 12-15 minutos.

DISFRUTAR! ..... Mira cómo quedo con varias hojas es esta masa ..... yo los hice en la noche del sábado, y fue nuestro desayuno en la mañana del domingo ......



















 Se sirve un cappuccino conmigo y conversamos soñando que estamos en Paris?











Se utiliza la misma pasta que los croissants. Yo use 1/3 de la masa, y me dio 14 lunnetes.

Crema pastelera
1/2 vaina de vainilla
250 ml de leche
1 cucharadita de mantequilla
2 yema de huevo
50 gramos de azúcar
1 cucharada de harina
2 cucharada de almidón de maíz

Tome las semillas de vainilla, y agregarla a la leche con mantequilla. Calentar hasta que este tibio.

Mezclar las yemas con el azúcar, la harina y el almidón de maíz hasta que estén bien combinados. Agregue la leche y revuelva bien. Coloque esta mezcla en el fuego y caliente hasta que esté espeso. Deje que se enfríe.

Aplanar la masa y cortar tiras de 1,5 cm de ancho. Retuerzala.


Cierre el circulo

Llevela hacia abajo y unala. Deje leudar por 2 horas

Rellene los hoyos con crema pastelera


Hornee a 350 ° F en el horno precalentado durante 12-15 minutos. Pincele los pasteles calientes con un jarabe. En mi caso, he utilizado mermelada de albaricoque. DISFRUTE!

Croissant aux Amandes (from my really favourite book now....Mastering the Fundamentals of French Pastry)

Dough

I have done three types of croissant dough, this is the one that we like the best....

I make the full amount of dough, but to make this croissant I only used 1/3. of this dough....the remaining dough.....be prepared.....more pastries to come!!

500 grams of all urpose flour
60 grams of sugar
10 grams powdered milk
12 grams of salt
100 grams of butter (room temperature)
4 teaspoons of dry yeast (I used quick rise). The recipe calls for 25 grams of fresh yeast, but I don't have it here.
230 ml cold water
250 grams of butter (chilled)

Mix all the dry ingredients (except chilled butter) in a bowl, and gradually add the water to knead it. Knead it until is elastic and soft (around 7 minutes) at medium speed. Flatten the dough in a rectangle, and place the butter inside. Close this dough. Cover with a plastic wrap, and chill it for 2 hours.



Follow the same pattern of rolling then the one in Feullitage Inverse

Almond Filling

90 g ground almonds
60 g icing sugar
1/2 egg
35 g butter (softened)
1 tablespoon cornstarch
1/2 teaspoon of almond essence

Grind the almonds, and mix with the sugar, butter, egg, cornstarch and almond essence until you have a paste like a cream.

Take 1/3 of the dough, and roll it into a rectangle. Cut triangles with a base of 5 cms. Place a teaspoon of almond paste in the base. Close it and roll it as it is shown in the pictures below.





Brush with an egg yolk, sprinkle some sugar and sliced almond. Let it rise for 2 hours.


Preheat the oven at 350 F, and cook it for 12-15 minutes.

ENJOY!!.....look how flaky is this dough.....I make them on Saturday night, and it was our breakfast on Sunday morning......































 Lunettes a la Vanille

You use the same dough as the croissants. I use 1/3 of the dough, and gave me 14 lunettes.

Pastry Cream
1/2 vanilla bean
250 ml of milk
1 teaspoon of butter
2 egg yolk
50 grams of sugar
1 tablespoon of flour
2 tablespoon of corn starch

Take the vanilla seeds, and add it to the milk ad butter. Warm it until medium hot.

Mix the egg yolks with the sugar, flour, and corn starch until well combined. Add the milk and stir it well. Place this mixture in the stove until is thick. Let it cool.

Flatten the dough, and cut strips of 1.5 cm wide. Twist it.


Close the circle

Press it down to make two holes. Let it rise for 2 hours

Fill the holes with pastry cream


Bake it at 350F in a preheated oven for 12-15 minutes. Brush the hot pastries with a syrup. In my case, I used apricot jam. ENJOY!







This dough is really flaky.
