Lemon Cream and Lady Fingers Dessert










If you have lemons....make Lemon Dessert!!

It looks like Tiramisu, but the ingredients are different. I wanted to make a dessert out of lemons,  and we loved it. Fresh and delicious it is an ideal dessert for a hot day!

Lemon Cream and Lady Fingers Dessert

Syrup

1 lemon zest
Juice of 1 lemon
1 cup of water
150 grams of sugar

Combine all the ingredients and simmer it at low temperature until it reduces to a half. Set aside

Lemon Cream

260 g mascarpone 
250 ml of whipping cream
3 large eggs 
1 lemon zest 
150 ml of lemon juice freshly squeezed 
180 grams of sugar 
3 sheets of gelatin silver quality
lady finger biscuits

Place the gelatin in a small amount of cold water. Set aside and let it hydrate.
Mix the eggs, sugar, lemon juice, and lemon zest. Cook it at low temperature until it thickens. Set aside. Add the mascarpone cheese, and mix it well with a hand blender. Warm the gelatin until dissolves, and add it to the lemon mascarpone cream. Mix it well. With a hand blender, beat the whipping cream until you have soft picks. Combine it with the lemon cream. Taste it for sugar, and if needed, add icing sugar.

Cover a mold with saran wrap. Add some cream in the bottom, then place lady finger biscuits that have previously soaked (1 or 2 seconds only) in the lemon syrup, then add another layer of cream, and another layer of lady finger biscuits. Place it in the fridge for 2 hours or until it sets. If you have some cream leftover, then place it in a glass with a piece of lady finger biscuits on top. ENJOY!!

  1. What a beautiful and light dessert! The layered one reminds me of German Kalter Hund (literally means cold dog), which is made with biscuits and chocolate cream.
