Tartas de Naranja Almendra....y algunas recetas de sus blogs!


Y el extraño clima continúa ..... hace tres días -19C ..... hoy +7 C. ....

Finalmente ..... He recibido lo que quería para Navidad ! ! ! ..... El libro Patisserie El dominio de los Fundamentos de la Pastelería Francesa de Christophe Felder . El libro es fantástico, y yo voy a  tratar de hacer una receta por semana.

La combinación de almendras y naranjas es una de las mezclas que mas nos agradan......







Tartas de Naranja Almendra  (aproximadamente 24 tartas pequeñas)

Masa

150 gramos de harina para todo uso
1 pizca de polvo de hornear
75 gramos de azúcar
75 gramos de mantequilla ( temperatura ambiente )
1 yema de huevo
1 cucharada de agua fría (yo usé 2 cucharadas )
Ralladura de 1/4 de  naranja

Mezclar todos los ingredientes secos . Añadir la mantequilla y mezclar bien hasta que este arenoso. Incorporar la yema de huevo junto con el agua . Amasar , pero no trabajar en exceso. Dejar reposar en la nevera durante 30 minutos.

Estirar la masa de un grosor de 2 mm . Cortarlo en circulos (yo use un vaso ) , y lo coloca en los moldes (yo usé el mini molde  de magdalenas ) .



relleno

80 gramos de mantequilla
2 huevos
100 gramos de azúcar
120 gramos de almendras molidas
1 cucharadita de esencia de almendra

Batir la mantequilla hasta que esté cremosa. Añadir el azúcar , los huevos , almendra, y la esencia de almendras.

Con este relleno , rellenar cada tartaleta . Hornear durante 12-15 minutos en el horno a 350 F ( precalentado primero !) .

Naranjitas confitadas


Cortar las naranjitas en trozos pequeños. Organizar en la parte superior de cada tartaleta . Las tartaletas deben estar cocinadas primero .

Glaseado de Frutas 

150 ml de agua
5 hojas de gelatina (10 gramos)
un pedazo de cáscara de naranja
un trozo de piel de limón
1/2 vaina de vainilla
100 gramos de azúcar

Colocar la gelatina en agua fría.


Ponga el agua con la cáscara de naranja , la cascara de de limón, el azúcar y la vainilla a fuego lento. Cuando empiece a hervir, sacar las cascaras y cortar el fuego. Agregue la gelatina y batir hasta que se disuelva . Deje que se entibie.



  
Cepille cada Tartalette con el glaseado de frutas. Coloque en el refrigerador durante la noche ..... el día siguiente ..... DISFRUTE !


Las galletas favoritas de mi hija con un toque . La receta original de Miren es Pastas de Limón al Cardamomo . Hicimos la misma receta , pero con un toque de chocolate y pistachos en la parte superior .

And the strange weather continues.....three days ago -19C.....today +7C.....

Finally.....I received what I wanted for Christmas!!!.....The Book Patisserie Mastering the Fundamentals of French Pastry by Christophe Felder. The book is fantastic, and I'm going to start trying to make a recipe per week.

The combination of almonds and oranges is one of the we like the best......




Orange Almond Tarts (approximately 24 mini tarts)

Dough

150 grams of all-purpose flour
1 pinch of baking powder
75 grams of sugar
75 grams of butter (room temperature)
1 egg yolk
1 tablespoon cold water (I used 2 tablespoons)
Zest of 1/4 orange

Mix all the dry ingredients. Add the butter, and mix it well until sandy. Incorporate the egg yolk along with the water. Knead it, but do not overwork it. Let it rest in the fridge for 30 minutes. 

Roll out the dough in a thickness of 2 mm. Cut it in rounds (I use a glass), and place it in your molds (I used mini muffins mold).



Filling

80 grams of butter 
2 eggs
100 grams of sugar
120 grams of ground almonds
1 teaspoon of almond essence

Beat the butter until it is creamy. Add the sugar, eggs, almond, and almond essence. 

With this filling, fill each tartelette. Bake for 12-15 minutes at 350 F oven (preheated first!).

Orangettes

I do my orangettes here

Cut the orangettes in small pieces. Arrange them on top of each tartalette. They have to be cooked first.

Fruit Glaze

150 ml water
5 gelatin sheets (10 grams)
a piece of orange zest
a piece of lemon zest
1/2 vanilla bean
100 grams of sugar

Place the gelatin in cold water.

Put the water with the orange zest, lemon zest, sugar, and vanilla bean to simmer. Take the zests out. Add the gelatind and whisk until it is dissolved. Let it warm





  
Brush each tartalette with the fruit glaze. Place them in the fridge overnight.....the next day.....ENJOY!!




The favorites cookies of my daughter with a twist. The original recipe from Miren is Pastas de Limon al Cardamomo. We did the same recipe, but with a touch of chocolate and pistachos on top.

Adios Invierno!...Bienvenido Verano!.....en Enero....y nuestra Galette de Rois...


En primer lugar .... Feliz Año Nuevo a todos los blogs que no he podido visitar !

Esta temporada ha sido la más increíble que hemos visto en Canadá en estos doce años. Tuvimos las peores tormentas de nieve , tormentas de viento y lluvia helada entre noviembre y los primeros días de enero . Fueron muchos los registros historicos que rompimos. Tuvimos más del doble de la nieve en cada mes de noviembre y diciembre , las temperaturas fueron las más bajas de la temporada ( -35C en noviembre, cuando deberíamos tener -20C ) , tuvimos vientos fuertes ( 120 km / hora ), el 7 de diciembre del 2013 en esta Provincia (Alberta ) algunas ciudades tuvieron las temperaturas más bajas del planeta tierra ..... Yupiiii ! ! .... le ganamos a Siberia y las islas del Artico! ......

Fue un periodo muy agotador porque para tener actividades diarias con ese tipo de tiempo es cansador ....

Tengo que admitir que me encanta el invierno , y me encanta la nieve. Sin embargo , esta vez fue demasiado. Por lo general, tenemos dos días de fuertes nevadas , a continuación limpiamos la nieve de la entrada de los autos y la acera , y después gozamos de una semana con cielos azules días de frío y  nieve ..... y luego el mismo patrón nuevo. Ahora, tuvimos nieve cada día , teniamos que limpiar tanto la calzada y la acera dos veces al día con las consecuencias para la espalda. Sólo para limpiar la nieve (a veces 15 cm de altura al día) , me tomaba más de una hora con -30C! . Además, hemos tenido sólo unos días grises que eran muy deprimente, y no tenía tiempo para escribir o visitar los blogs ..... mis disculpas por eso!

Ahora, después de vientos máximos históricos que tuvimos la semana pasada (120 km/hora) que causó no sólo daños a la propiedad de algunas casas junto a cortes de energía , sino también trastornos en el transporte público, estamos teniendo temperaturas entre +5 y +12 C en un momento en que debemos tener entre -10C y -22C , no teniendo en cuenta que febrero suele ser el mes más frío con -40 º C !

¿Qué está pasando en el mundo ?

¿Qué sucede ahora? La nieve se está derritiendo rápidamente, lo que es muy malo  tanto para el suelo como para las inundaciones a las viviendas . Además, he visto aves que por lo general vienen en abril (un signo de muy temprana primavera ?) . Nadie sabe qué hacer ..... ¿Deberíamos comenzar a plantar tomates ahora? o esperar hasta abril? .... ¿Vamos a tener más nieve? o el invierno se ha ido y ahora vamos a tener un verano muy seco, con una gran cantidad de incendios forestales? ......

Pedimos disculpas por esta larga historia , pero muchas personas me han escrito correos electrónicos preguntándome lo que está pasando aquí ....

Una cosa es segura es que sin la limpieza de la nieve , voy a tener más tiempo para publicar y visitar sus blogs !


Y, por supuesto , nuestra última tradición de Navidad iba a tener un desayuno con un Gallete de Rois . Esta vez, hice uno muy grande (tamaño doble) para tener más comida y menos tiempo en la cocina (necesitaba el tiempo para la limpieza de la nieve!) . No fue una buena idea. La coccion fue diferente , pero lo disfrutamos de todos modos!

Good Bye Winter!....Welcome Summer!.....in January....and a Galette de Rois...


First....Happy New Year to all the blogs that I have not been able to visit!

This season has been the most incredible we have seen in Canada in these twelve years. We had the worst snow storms, blizzards, and freezing rain between November and the first days of January. It was that much that we broke many records. We had more than double the snow for each month November and December, the temperatures were the lowest for the season (-35C in November when we should have -20C), we had strong winds (120 km/hour) last week, on Dec 7th, 2013 this Province (Alberta) had few cities with the lowest temperatures on planet earth.....yoopi!!....we won to Siberia and the High Artic Islands!......

It was a very tiring period because to have daily activities with that type of weather is exhausting....

I have to admit that I love winter, and I love the snow. However, this time was too much. Usually, we have two days of heavy snows, then you clean both your driveway and sidewalk, and after you have a week with blue skies, cold days and no snow.....and then the same pattern again. Now, we had snow each day, we have to clean both the driveway and sidewalk twice a day with the consequences for your back. Just to clean the snow (sometimes 15 cm of height daily), it took me more than one hour!. In addition, we had only gray days that were very depressing, and I had no time to post or visit any blog.....my apologies for that!

Now, after record high winds last week that  caused not only property damage, and power outages, but also disruptions to the public transit we are having temperatures between +5 and +12C at a time when we should have between -10C and -22C, not considering that February is usually the coldest month with -40C!

What is going on in the world??

What happens now? Snow is melting rapidly that is very bad for both the soil and for flooding to the houses. Also, I have seen birds that usually comes in April (a sign for a very-early-Spring?). Nobody knows what to do.....Should we start planting tomatoes now? or wait until April?....Are we going to have more snow? or the winter is gone and now we will have a very dry summer with a lot of forest fires?......

Apologies for this long story, but many people has wrote me emails asking me what is happening here....

One thing for sure is that without cleaning for the snow, I will have more time for posting and visiting your blogs!


And of course, our last Christmas Tradition was to have a breakfast with a Gallete de Rois. This time, I made one very big (double size) to have more food and less time cooking (I needed the time for cleaning the snow). It wasn't a good idea. It cooked differently, but we enjoyed it anyway!

Galletas Arcoiris de Navidad y Dulces de Navidad.....




Noviembre .... ¿Dónde te fuiste????

Noviembre fue rápido, y para nosotros ha sido un mes muy duro. Hemos tenido no una sino tres tormentas de nieve cada una de 20 a 25 cms en un día .... muy inusual para esta época .... y no hemos llegado a Enero ... todavía no estamos en invierno! ! ....... Estamos cansados ​​de limpiar la nieve ....

Algunas recetas de Navidad del año pasado que seguro vamos a repetir este año!

Estas galletas son de Hilmar, ella los hizo con avellanas, pero yo las hice con almendras ..... DELICIOSAS!




Y tambien de Hilmar  Pan de Almendras con Naranjitas Confitadas  nuestro desayuno la semana pasada!





Además , el año pasado hice Galletas Arcoiris de Navidad, las cuales son ideales por sus colores. La receta es de una amiga ...

Galletas Arcoiris de Navidad

250 g de pasta de almendras (puede hacer su propio mazapan como yo)
2 tazas de harina para todo uso ( tamizado )
3/4 taza de azúcar
120 gramos de mantequilla ( temperatura ambiente )
4 huevos,separados
1 cucharadita de polvo para hornear
2 cucharaditas de extracto de almendra
Una pizca de sal
El color verde y rojo (he usado en gel)
mermelada de albaricoque
Chocolate de leche o  semidulce ( su preferencia)

Combine la harina , sal y polvo de hornear. Ponga a un lado .

En un tazón grande, combine la mantequilla , 1/ 2 taza de azúcar, esencia de almendras y pasta de almendras . Añadir las yemas de huevo. Batir hasta que esté cremosa y de color claro . Añadir la harina , la sal y el polvo para hornear .

Batir las claras de huevo hasta que estén espumosas , y agregue 1 /4 taza de azúcar. Batir hasta que esté brillante y firme.

Poco a poco, incorporar las claras en la mezcla de harina. Dividí las claras en tres porciones, y las incorpore lentamente.

Divida la mezcla en tres. A una parte , agregará el rojo , al otro color verde, y el último nada .
Extender sobre papel para horno en tres rectángulos iguales .

Hornee  a 350 ° F durante 8-10 minutos. No cocine demasiado . La masa tiene que quedar cocida, pero no dura.
Cuando todas las capas estan frias, ampiece a armar las galletas. Coloque su primera capa sobre una bandeja, y distribuye  mermelada de albaricoque, luego la segunda capa, y mermelada de albaricoque de nuevo , a continuación, la tercera capa. Cubra con una envoltura de plástico , y poner una bandeja en la parte superior con peso. Utilicé libros de cocina. Déjelo en el refrigerador durante la noche.




Al día siguiente, saque las galletas de la nevera. Derretir su chocolate favorito y cubrirlo. Una vez que el chocolate esté firme, cortarlas en cuadrados o rectángulos. Disfrutar!
Seguramente voy a hacerlas de nuevo porque son deliciosas ....

Rainbow Christmas Cookies and Christmas Sweets.....





November....Where you were gone????

November went fast, and for us has been a very tough month. We have had no one, but three snow storms each one of 20-25 cms in a day....very unusual for this period....and we have not arrived to January...we are not in winter yet!!.......We are tired of cleaning snow....

Some Christmas recipes from last year that for sure we will repeat this year!

These cookies are from Hilmar, she made them with hazelnuts, but I made them with almonds.....DELICIOUS!!




And also from Hilmar a Pan de Almendras with Candied Orange peel  it was our breakfast last week!





Also, last year I have made Rainbow Christmas Cookies, which are ideal for their colors. The recipe is from a friend...

Rainbow Christmas Cookies


250 g almond paste 
2 cups all-purpose flour (sifted)
3/4 cup of sugar 
120 grams of butter (room temperature)
4 eggs, separated
1 teaspoon baking powder
2 teaspoons almond extract
Pinch of salt
Green and red color (I used in gel)
Apricot jam
Milk or semisweet chocolate (your preference)


Combine flour, salt and baking powder. Set aside.

In a large mixing bowl, combine the butter, 1/2 cup of sugar, almond essence, and almond paste. Add the egg yolks. Beat until it is creamy and light in color. Add the flour, salt, and baking powder.
Beat egg whites until foamy, and add 1/4 cup of sugar. Beat until is glossy.
Slowly, fold the eggs white in the flour mix. I divided the egg whites in three, and fold it slowly.
Divide the mix in three. To one, you will add red color, to other green color, and the last nothing.
Spread it over parchment paper, in three equal rectangles.
Bake t in a oven at 350F for 8-10 minutes. Do not overcook. The dough has to be just cooked.
When all layers are cool, transfer them to a tray. Place your first layer, and spread on top apricot jam, then the second layer, and again apricot jam, then the third layer. Cover  it with a plastic wrap, and put a tray on top with weight. I used cookbooks. Leave it in a fridge overnight. 



The next day, take the cookies out of the fridge. Melt your favorite chocolate and cover it. Once the chocolate is firm, cut them in squares or rectangles. ENJOY!


For sure I will make them again because they are delicious....
