Colorful Quiches......Pumpkin Dough, Spinach Dough, and Beet Dough with Vegetable Filling and Cheese


I'm tired of winter, and the lack of color in the food!.....Therefore, even though we are still in the -25C range, I decided to cook with some color (natural colors of course!) to lift up my spirit......and guess what....I feel better!


Pumpkin Dough, Spinach Dough, Beet Dough Quiches

200 grams pumpkin cooked (without water) or 3 tablespoons spinach powder or 3 tablespoons Beetroot powder 
400 g flour 
1 teaspoon baking powder 
1/2 teaspoon salt 
120 grams of butter (cold)

Mix the flour, baking powder and salt. Add the butter in pieces, and mix it until it is with a sandy texture. Add either the pumpkin, spinach or beet. Add water until you have a dough that it is smooth, but not sticky. Let it rest for 1 hour in the fridge.

Roll it with a pin, and put it in a pie/quiche mold previously greased. Freeze for 1 hour. Take it out, and make holes with a fork. Cook it in a preheated oven at 350F for 15 minutes. Take it out.













 Cream to fill 2 large tarts (26 cm each) 
1/2 cup blanched almonds (in pieces or sliced)
1 cup milk 
3 eggs 

Put it in the blender the milk, eggs, and almond. Blend it until is creamy. Season it with salt.

For the filling:
Sautee mushrooms, leeks, zucchini (or whatever you have in the fridge)
tomato 
Grated cheese or sliced 
Salt Pepper 
Oregano 
Olive oil

Stir fry the vegetables you want to use. Distribute them on top of the half-cooked crust

Add the creamy mixture on top. Add grated or sliced cheese. Decorate with cherry tomatoes.






 Cook at 350F in a preheated oven until the cream is set. In my case, it was 30 minutes. ENJOY!

Seleccion de Recetas de sus Blogs......


No sé lo que está pasando este 2014 ..... Ayer fue la Navidad de 2013, y ahora estamos en marzo 2014! 

He estado tan ocupada que no he tenido tiempo ni para publicar ni comentar lo que yo quería. He estado copiando recetas de sus blogs, o repitiendo mis propias recetas .... espero tener más tiempo para el final de marzo empezar con buen ritmo...

¿Tiene algunas migas de pan? Siempre tengo en el congelador que porque hago el pan en casa, y al congelarlo,  siempre quedan algunos pedazos de pan que terminan en pan rallado. Hice Galletas de Almendras y Pan Rallado from Hilmar, y reemplace el chocolate blanco por narajitas confitadas.

Do you have some breadcrumbs? I always have it because I make bread at home, and freeze for the week; thus, I always have some pieces of bread that end up in breadcrumbs. I did Galletas de Almendras y Pan Rallado from Hilmar, and I substitute the white chocolate for Orange Candied Peel.

Comida Chilena .... Pastel de Papas y Ensalada de Apio, Nueces y Aguacate






Tengo que admitir que aunque yo soy de Chile, yo no cocino a menudo comida Chilena. Para ser honesta, estoy inclinada hacia la comida Mediterránea, la comida India, Asiática y Peruana ...... me encantan las especias! 

Mi hija ama las espinacas, por lo tanto, tengo que ser creativa con el fin de cocinar con ella, y no repetir los platos. Recuerdo que este plato es muy Chileno, a pesar de que se hace con carne, yo la sustituyo por espinacas y brotes.


Pastel de Papas

1,5 kg de patatas 
400 gramos de espinacas 
200 gramos de brotes (las produzco en casa) 
2 cebolla (picada) 
Huevos duros 
Aceitunas negras sin hueso 
Pasas 
Comino 
Sal 
Pimienta 
Aceite de oliva 
Queso Parmiggiano rallado para gratinar

Pelar las patatas, cocinar y hacer puré con ellos, tal cual como si fuera a hacer "puré de patatas".  

Lave la espinaca y los brotes. Picarlos. 

En una olla, poner el aceite de oliva y calentar. Cocine las cebollas hasta que estén transparentes. Sazonar con sal y comino. Me gusta con mucho comino. Agregue la espinaca y los brotes. Cocine bien. Reservar.

Para este plato, yo uso las ollas de barro típicos chilenos.


Poner Pure de Papas

Poner la espinaca, un trozo de huevo duro, una aceituna, dos pasas.


Cubrir con pure de papas


Poner queso parmesano o lo que quiera para gratinar. Poner en horno precalentado a  400F por 20 minutos hasta que tenga una cubierta dorada y crujiente. DISFRUTE.



Ensalada de Apio, Nueces y Aguacate

Esta es una ensalada que nos gusta mucho. Era comida típica para la víspera de Año Nuevo ... 

Lo hice para San Valentin porque los ingredientes son buenos para el corazón! 

Puede modificar las cantidades a su gusto 

7 palos de apio (yo uso el corazón del apio, porque es suave) 
1 aguacate (grande y maduro) 
Una mano de nueces (picadas) 
1 limón 
sal 
pimienta 
aceite de oliva 

Lavar y cortar el apio. Colóquelo en un recipiente, y se sazona con sal, pimienta, limón y aceite de oliva. Ponga a un lado por 3 minutos. 

Lave el aguacate, pelarlo, y cortar en cubos. Añadir al a apio junto con las nueces. Corrija la  sal, limón y aceite de oliva. DISFRUTE!






Chilean Food....Potatoes "Pastel " and Celery, Walnut, Avocado Salad






I have to admit that even though I am Chilean, I don't cook often Chilean food. To be honest, I am leaned towards Mediterranean, Indian and Asian food......I love spices!

My daughter love spinach; therefore, I have to be creative in order to cook with it, and not repeat dishes. I remember this dish as very Chilean, even though is make with meat, I substitute it with spinach and sprouts.


Pastel de Papas

1.5 kg of potatoes
400 grams of baby spinach
200 grams of sprouts (I produce them at home)
2 onions (chopped)
Boiled eggs
Pitted black olives
Raisins
Cumin
Salt
Pepper
Olive oil
Parmiggiano cheese to garnish and grate it

Peel the potatoes, cook and mashed them as you will do "mash potatoes". Season it as your taste.

Wash the baby spinach and sprouts, chopped them.

In a pot, place olive oil and heat it. Sautee the onions until they are translucent. Season it with salt and cumin. I like it with a lot of cumin. Add the spinach, and sprouts. Cook them well.

For this dish, I use the typical Chilean clay pots.



Place a level of mash potatoes

Place the sautee spinach, a piece of boiled egg, an olive, two raisins


Cover with mash potatoes


Put some parmiggiano cheese, and heat it in the oven at 400F for 20 minutes until you have a crusty top. ENJOY!



Celery, Walnut, Avocado Salad

This is a salad that I like very much. It was typical for New Year's Eve..

I made it for St Valentines because the ingredients are good for the heart!

You can modify the quantities at your taste

7 sticks of celery (I use the heart of the celery because is soft)
1 avocado (big and ripe)
A hand of walnuts (chopped)
1 lemon
Salt
Pepper
Olive oil

Wash and cut the celery. Place it in a bowl, and season it with salt, pepper, lemon, and olive oil. Set aside for 3 minutes.

Wash the avocado, peel it, and cut in cubes. Add it to the celery along with the walnuts. Correct it for salt, lemon, and olive oil. ENJOY!
