Greens and Herbs Morocan Mssemen with Cheeses






Since I have greens and herbs from my garden, I decided to try Morocan Mssemen. Morocan Mssemen is a fried bread that usually is filled with spinach, spices, and feta. I decided to make it with greens, spices, parmiggiano reggiano cheese, and kashkaval cheese.

Morocan Mssemen

Dough

420g flour

320g semolina fine

400 ml warm water

1 1/2 tsp instant dry yeast

1 tsp salt

1 tsp sugar

Olive oil  and butter for brushing


Filling

Mix of greens: spinach, swiss chard, beet leaves, parsley, cilantro, oregano

4  garlic cloves chopped

1 1/2 tsp Spanish paprika

1 tsp salt 

150 grams parmiggiano reggiano grated cheese

150-200 grams grated Kashkaval cheese


Wash and chop the greens. Add garlic, paprika, salt, and parmiggiano reggiano cheese. Set aside

Dough

Mix dry ingredients. Add the water, and kneed it for 10 minutes. Let it rise for 2 hours. Divide the dough in balls of 120-140 grams each.

You have two ways of making these Mssemen. 

With a rollin pin, flatten the dough very thin, and make some cuts as shown below.




Brush the dough with a mix of olive oil and butter. Place some filling, and on top of the filling some cheese. Fold it following the cuts, and with a rollin pin, flatten it again. Place it on a cast iron pan with some olive oil, and fry it 3-4 minutes per side, or until they are golden brown. You will end up with a flaky soft bread.










The second way of shaping it is flatten a piece of dough, brush it with olive oil and butter.  Add some filling and cheese. Fold it, and place it over another piece of dough that has been flatten it.





Place it on a cast iron pan with some olive oil, and fry it 3-4 minutes per side, or until they are golden brown. You will end up with a soft bread that has more filling. ENJOY!
