LEPINJE or LEPČE Bread from North Macedonia


As a Christmas gift for myself, I went to ethnic grocery stores, and I bought flours from different countries with the idea to bake new breads. For me the best gifts are those that I can eat!

I bought a flour from North Macedonia, and I had a recipe that was shared with me long time ago in Canada. I made this bread, and it was delicious, soft, and easy to make!


Lepinje Bread

420 g flour plus some for dusting

260 ml water 

1 teaspoon of salt

1 teaspoon of sugar

2 teaspoons of instant yeast

1 tablespoon of olive oil

Water for spraying the bread 


Mix water, sugar, and yeast. Let it foam for 10-12 minutes. Add the flour and salt. Mix it well with a wooden spoon. This dough is sticky. Don't add more flor. Add the olive oil, and kneed it for 10 minutes with your hands. Let it rise for 1 hour. Punch it, and place it over a table with some flour. Divide it in 4 pieces. Make each piece a ball, place it over parchment paper with flour, and let it rise covered for 20 minutes.

After 20 minutes, flatten it from the center towards the exterior. Do not flatten the exterior. Let it rise for 1 hour covered. Spray a little water before placing it in the oven.

Bake them in a preheated oven at 475F for 10-12 minutes or until they are golden brown. They are baked very quickly. ENJOY!
