Thanksgiving Meal.....Wild Mushroom Soup, Orange, Almond, Mascarpone and Greek Yogurt Verrine, Double cook Yam with Zaatar, Almonds and Feta Cheese



I have a lot of recipes to post, and not much time because we are preparing the house (and the pantry) for the winter.....

However, I want to share with you a selection of dishes we ate for Thanksgiving!




Wild Mushroom Soup

I found mushrooms from Korea that were pesticide-free at a very good price. I took pictures of them because they were new to me. 






Wild Mushroom Soup

5 cups mixed mushrooms
1/4 cup porcini dried mushrooms (soaked)
1 onion
1 leek
2 garlics
2 tablespoons of cashew cream
1/4 cup of white wine
4 cups of vegetable broth (less or more)
Salt
Pepper
Olive oil
Cheese or green chives for garnishing

For the cashew cream:

Soak 1/2 cup f cashew in water overnight. The day after, drain it and blend it with one cup of water. The result is your cream. Leave it in the fridge or freeze it for use it later.

Chop the onion, leek, and garlic. In a pot, stir fry them in olive oil until they are translucent, add salt and pepper.

Clean the mushrooms. Cut them and add them to the pot. Add the wine, and let it evaporate it. Add the broth just to cover the mushrooms, and simmer them for 5-7 minutes. With a hand blender, puree the mushrooms. Correct for salt, pepper, and add the cashew cream. Serve warm with cheese or green chives on top. ENJOY!




Orange, Almond, Mascarpone and Greek Yogurt Verrine

3 oranges (juice of three oranges, zest from 2 oranges)
60 grams of grinded almonds
180 grams of mascarpone cheese
60 grams of Greek Yogurt
2 1/2 gelatine sheets
2 tablespoons of icing sugar (more or less depending on your taste)
1/4 teaspoon of almond essence

In cold water, soak the gelatine.  Dissolve it in hot water. Set aside.

Mix the almonds, almond esence, mascarpone, Greek yogurt, and sugar. When the mix is smooth, add the orange zest and juice. Incorporate the gelatine, mix it well and distribute it in glasses. Let it set firm in the fridge for 3 hours. ENJOY!





Double cook Yam with Zaatar, Almonds and Feta Cheese

These yams are very simple. I was doing many things in the oven at the same time, and I use that heat to cook  them first.

Yams (1/2 per person)
Feta Cheese
Sliced almonds
Zaatar
Saly
Pepper

Wash and  wrap in aluminum foil the yams. Cook them in the oven for 30 minutes at 375F. Leave it in the oven until they are cool.

Cut them in half, and take the flesh out. Mash the yam, and season it with salt, pepper, and zaatar.
Sprinkle with sliced almonds and feta cheese. Place it in the oven until the almonds are toasted. ENJOY!

Celebrando Accion de Gracias.....Bolitas de Queso de Cabra, Pistacho y Datiles



Como ha volado este año……estamos celebrando Acción de Gracias nuevamente!

El clima ya está helado, los arboles casi sin hojas, el olor a nieve se siente que llega y los días están más cortos….

Pero independiente del color gris del cielo, el cual es solo un momento en nuestras vidas…..estoy agradecida cada día más de esta existencia...

Este viaje de ya 11 años fuera del terruño que nos vio nacer, ha sido como una cena con platos de comida que tienen múltiples sabores…..con sabores a veces amargos, con tintes  ácidos,  un poco salado, algo de umami, bien picante y no menos astringente, pero con un delicioso dulzor al final …..y como toda comida compleja y bien elaborada nos quedamos con la mezcla inigualable de sabores,  sensaciones y experiencias que la vida en este país nos ha dado en estos  11 años ……

Ahora, cuando miro para atrás el camino recorrido …..una mezcla de sentimientos me invade….han sido tantos los buenos momentos…… y tantos otros que sin duda fueron duros…… pero que al final sirvieron para fortalecer nuestro Espíritu….y por todos ellos doy Gracias…..

Gracias por los amigos que encontramos, los amigos que dejamos…..y por los amigos que llegaran…..

Gracias por el solo hecho de vivir …..que ya la vida misma con sus penas y alegrías vale la pena….y ha valido esta experiencia de partir nuevamente…..aun en aquellos momentos.....

Gracias a Ustedes por compartir este rincón de comida y por enseñarme cada día con sus recetas….no saben cuánto disfrutamos cuando hacemos sus comidas!


Y como todo en la vida…..después de una larga etapa de sacrificios que hemos hecho….viene la recompensa…..y como en toda buena comida…..ahora estamos disfrutando de la dulzura del postre …..

Acá empezamos con las Cenas de Acción de Gracias el Viernes….así que hemos comido más que en Navidad!!.....

Bolitas de Queso de Cabra, Pistacho y Datiles

140 gramos de queso de cabra (temperatura ambiente)
65 gramos de queso crema (temperatura ambiente)
12 datiles (sin hueso). Es mejor usar la mitad de un datil por bolita
sal
pimienta
aceite de oliva
Pistachos (molido)

Mezclar el queso con sal, pimienta y aceite de oliva hasta que estén cremosos. Tome 1/2  cuchara en sus manos, y colocar un pedazo de datil (1/2 datil). Hacer una bola y rodar sobre los pistachos molidos. Usted puede usar cualquier nuez. Enfrie durante dos horas y sirva. DISFRUTE!













Celebrating Thanksgiving......To start Goat Cheese, Pistachio and Dates Balls



 This year has flown ...... we are at Thanksgiving again !

The climate is already frozen , almost leafless trees , the smell of snow feel has arrived and the days are shorter ....

But independent of the color gray of sky , which is only a moment in our lives ..... I am grateful every day for this life ...

This journey of 11 years out of the land
where we were born has been like a dinner with dishes that have multiple flavors ..... sometimes bitter flavors with acid dyes , a little salty, umami some either Spicy and not less astringent, but with a delicious sweetness at the end ..... and like all complex and well prepared food stayed with the unique blend of flavors, sensations and experiences that life in this country has given us in the last 11 years ......

Now when I look back the path ..... mixed feelings over me .... have been so many good times ...... and many others who were certainly hard ...... but ultimately served to strengthen our spirit .... and I give thanks for them all .....

Thanks for the friends we meet, the friends we left ..... and friends arrived .....

Thanks for the mere fact of living ..... that and life itself with its joys and sorrows worth .... and it has paid off again this experience even in those moments .....

Thanks to you for sharing this corner of food and for teaching me every day with their recipes .... do not know how much we enjoyed when we make your meals!


And like everything in life ..... after a long period of sacrifices we have made .... comes the reward ..... and as in all good food ..... now we are enjoying the sweetness of the dessert on this trip .....

Here we start with the Thanksgiving Dinner on Friday .... so we have eaten more than Christmas ! ! .....

Goat Cheese, Pistachio and Dates Balls

140 grams of goat (cheese room temperature)
65 grams of cream cheese (room temperature)
12 dates (pitted). It is better to use half of a date per ball
Salt
pepper
Olive oil
Pistachios (grinded)

Mix the cheeses with salt, pepper, and olive oil until they are creamy. Take 1/2 of a tablespoon in your hands, and place a piece of date (1/2 date). Make a ball, and roll it over pistachios grinded. You can use any nuts. Chill for two hours and sere. ENJOY!!

De Regreso..... con Dip de Vegetales y Quesos, y Champiñones con Queso de Cabra y Puerros....


Aquí estamos otra vez!

No tienen idea de lo mucho que quería volver al blog. Este es para mí un espacio para pensar, compartir, disfrutar, reír .... y comer!

Este fue un verano interesante. Por diferentes razones, nos quedamos en la ciudad, y disfrutamos del poco verano que tuvimos este año. Fue un verano lluvioso! .... Inundaciones por todas partes en esta Provincia, excepto en la ciudad en que vivimos.

Para celebrar todas las cosas buenas de la vida, tuvimos una mini fiesta en casa ...... y aquí están algunas de las recetas:

 Dips de Vegetales 

 Dip de Frijoles

Dip de Frijoles

300 gramos de frijoles cocidos
1/2 cucharadita de romero fresco (picado), más o menos al gusto. Además, puede utilizar otras hierbas.
2 dientes de ajo (asado)
2 cucharadas de queso de cabra
sal
pimienta
3 cucharadas de aceite de oliva

En un procesador de alimentos o con una batidora manual, triturar los frejoles con el aceite de oliva y queso de cabra. Agregue el ajo, la sal y la pimienta. Pasar a un tazón y agregue el romero picado. Mezclar bien. DISFRUTAR!




 Dip de Tomates secos, queso de cabra y queso feta

Dip de Tomates secos, queso de cabra y queso feta

1 taza de tomates secados al sol.
2 dientes de ajo. He utilizado un ajo asado y uno fresco.
1/2 taza de queso feta 
4 cucharadas de queso de cabra
4 cucharadas de aceite de oliva
3 cucharadas de albahaca fresca (picada)
sal
pimienta
hojuelas de chile seco
1 cucharadita de vinagre balsámico

Remojar los tomates secos en agua caliente durante dos horas. Escurrir. Coloque los tomates secados al sol en un procesador de alimentos o una licuadora manual. Muelalos con el aceite de oliva, queso feta, queso de cabra, ajo, aceite de oliva y vinagre balsámico. Pasar a un tazón y agregue la albahaca picada, sal y pimienta. Mezclar bien. DISFRUTAR!

 Dip de Guisantes Verdes

Dip de Guisantes Verdes


1 taza de guisantes congelados 
1/2 chalota (picada)
1 diente de ajo (asado)
Ralladura y el jugo de 1/2 limón
4 cucharadas de aceite de oliva
60 gramos de queso parmesano (rallado)
sal
pimienta.

Cocer los guisantes en agua caliente hasta que estén "al dente". Escurrir. Coloque los guisantes en un procesador de alimentos o una licuadora. Muelalos con el aceite de oliva, la chalota, el ajo, y limón. Pasar a un tazón y agregue el queso parmesano, sal y pimienta. Mezclar bien. DISFRUTAR!

 Dip de Pimiento rojo asado y queso de cabra 

 Dip de Pimiento rojo asado y queso de cabra 

1 pimiento rojo asado
1 diente de ajo
100 gramos de queso de cabra
aceite de oliva
sal
pimienta

Asar el pimiento rojo. En un procesador de alimentos o una licuadora muela el pimiento asado con el queso, y el aceite de oliva. Pasar a un recipiente y añadir la sal y la pimienta. Mezclar bien. DISFRUTAR!

Champiñones con queso de cabra y puerros


Champiñones con queso de cabra y puerros

15 Champiñones pequeños
80 gramos de queso de cabra
sal
pimienta
2 cucharadas de aceite de oliva
hojuelas de chile seco
puerro

Limpiar los champiñones, y quitar el tallo. En una sartén, caliente aceite de oliva y sofria trozos de puerro.

Mezclar el queso de cabra con sal, pimienta, aceite de oliva y las hojuelas de chile. Llene cada hongo. Encima, colocar un trozo de puerro sofrito. Cocine durante 10 minutos a 400 º F, o hasta que los champiñones estén cocidos y el puerro esté dorado. DISFRUTAR!

Here we are again!

You have no idea how much I wanted to come back to the blog. It is my space to think, share, enjoy, laugh....and eat!!

This was an interesting summer. For different reasons, we stayed in the city, and we enjoy the little summer we had this year. It was a rainy summer!!....floods everywhere in this Province, except in the city that we live.

To celebrate all the good things in our life, we had a mini celebration at home......and here are some of the recipes:

 Vegetables Dips

 Bean Dip

 Bean Dip

300 grams of cooked beans
1/2 teaspoon of fresh rosemary (chopped) more or less if you like. Also, you can use other herbs.
2 garlic cloves (roasted)
2 tablespoons of goat cheese
Salt
Pepper
3 tablespoons of olive oil

In a food processor or with a hand blender, mash the beans with the olive oil, and goat cheese. Add garlic, salt and pepper. Transfer to a bowl, and add the chopped rosemary. Mix it well. ENJOY!



 Sun-dried tomato, goat cheese, and feta cheese dip

Sun-dried tomato, goat cheese, and feta cheese dip

1 cup of sun-dried tomatoes.
2 garlic cloves. I used one grilled, and one fresh.
1/2 cup pf feta cheese
4 tablespoons of goat cheese
4 tablespoons of olive oil
3 tablespoons of fresh basil (chopped)
salt
pepper
dry chili flakes
1 teaspoon of balsamic vinegar

Soak the sun-dried tomatoes in hot water for two hours. Drain them. Place the sun-dried tomatoes in a food processor or a blender. Mash them with the olive oil, feta cheese, goat cheese, garlic, olive oil, and balsamic vinegar. Transfer to a bowl, and add the chopped basil, salt and pepper. Mix it well. ENJOY!

 Sweet-pea dip

Sweet-pea dip

1 cup pf frozen peas
1/2 shallot (chopped)
1 garlic clove (grill)
Zest and juice of 1/2 lemon
4 tablespoon of olive oil
60 grams parmiggiano cheese (grated)
salt
pepper.

Cook the sweet peas in hot water until they are "al dente". Drain them. Place the sweet peas in a food processor or a blender. Mash them with the olive oil, shallot, garlic, olive oil, and lemon. Transfer to a bowl, and add the parmiggiano cheese, salt and pepper. Mix it well. ENJOY!

 Roasted Red Pepper and Goat Cheese Dip

 Roasted Red Pepper and Goat Cheese Dip

1 Red Bell Pepper Roasted
1 garlic clove
100 grams of goat cheese
olive oil
salt
pepper

Roast the red pepper.  In a food processor or a blender, mash it with the olive oil,  and goat cheese. Transfer to a bowl, and add salt and pepper. Mix it well. ENJOY!

 Mushrooms with Goat Cheese and Leeks


Mushrooms with Goat Cheese and Leeks

15 small mushrooms
80 grams of goat cheese
salt
pepper
2 tablespoons of olive oil
dry chili flakes
leek

Clean the mushrooms, and take the stem out. In a pan, heat olive oil and stir fry pieces of leek.

Mix the goat cheese with salt, pepper, olive oil, and chili flakes. Fill each mushroom. On top, place a piece of leek. Cook it for 10 minutes  at 400F, or until the mushrooms are cooked, and the leek is golden. ENJOY!

Hola a Todos.....y Nos Vemos en Octubre!



Hello?....Buenos Dias?.....Bonjour?.....Ciao?....Salve?....你好?.....こんにちは?.....ສະບາຍດີ?....ahoj?


Hay alguien por ahi?

Hola a todos!....Finalmente de vuelta hasta mi proximo post en Octubre.....Primero que nada, mil gracias por todos los correos que empezare a contestar personalmente en estos dias....La verdad es que forzosamente me vi obligada a dejar el blog y las visitas a sus delicias producto de un accidente automovilistico.....estoy bien....muy bien....pero ha sido un mes complicado.....

La verdad es que me chocaron y yo ni culpa!!.....por suerte y gracias a Dios iba sola.......

Y con el choque vinieron las visitas al medico, los dolores de cabeza, la espalda, el mal dormir, la fisioterapia, el arreglo del auto, la compania de seguros, el juicio por perdida de valor del auto (que aun no comienza....)....etcetera!....han pasado 5 semanas y no se como el tiempo ha volado....pero ya estoy mejor y por suerte sin secuelas.....pero la verdad es que tiempo no he tenido....asi que me disculpan por haber dejado todo botado.....

Y como aun estoy sin tiempo, he decidido reiniciar todo en Octubre....me pondre al dia con sus recetas, los estare visitando, comentando y comiendo virtualmente.....pero empezare a subir recetas en Octubre.....

Que tengan un Feliz Verano y de seguro estare visitando sus fogones este fin de semana!!
