Pate de lentejas (Mujadarra) , Flan de Cebollas y Pate de Setas

 


No es necesario gastar mucho para comer sano y rico......


Paté de Mujadarra

Este plato se suele cocinar y servir sin moler. Lo muelo porque es un buen dip para servir con pan o grissini

200 gramos de lentejas

40 gramos de arroz

2 cebollas picadas

2 dientes de ajo picados

sal

pimienta

Comino

Le agrego orégano seco y / o pimentón español para degustar


Cocine las lentejas con arroz y ajo hasta que estén cocidas. Deja enfriar. Sofría las cebollas. Dejar de lado.

Licuar las lentejas con el comino y el orégano seco y / o pimentón español. Sirve con cebollas caramelizadas encima. ¡DISFRUTAR!




Flan de Cebolla
2 cebollas picadas
2 puerros picados
3 dientes de ajo picados
200 g de queso ricotta
65 g de queso parmesano rallado
3 huevos
sal
pimienta
hojas de salvia
Aceite de oliva

Sofreír la cebolla, los puerros y el ajo. Déjelo enfriar. Mézclalo con los quesos, los huevos, la sal y la pimienta. Engrase los moldes con aceite y coloque una hoja de salvia (puede usar romero u orégano) en el fondo. Coloca la mezcla encima. Cocínelo en el baño de María. Pongo agua en una olla y la cocino en la estufa. Pruébelo con un cuchillo para comprobar cuándo está cocido. ¡Disfrutar!

Paté de setas

200 gramos de champiñones limpios picados

1 puerro picado

3 dientes de ajo picados

aceite de oliva

romero, orégano o cualquier otra hierba seca

pan rallado (usé pan viejo que molí)

sal

pimienta

Pimentón picante español


Sofreír el puerro y el ajo durante 3 minutos y añadir las setas. Cocínelo a fuego medio. agregue sal, pimienta y las hierbas que desee. Deja enfriar. Mézclalo en una licuadora. Para mayor consistencia, puede agregar pan rallado. Agrega pimentón picante español. ¡DISFRUTAR!

Lentil dip (Mujadarra), Mushroom Pate and Onion Flan



Mujadarra pate

This dish is usually cooked and served without blending it. I blend it because it is a nice dip to serve with bread or grissini

200 grams of lentils

40 grams of rice

2 onions chopped

2 garlic cloves chopped

salt

pepper

Cumin

I add dry oregano and/or Spanish paprika for tasting

Cook lentils with rice and garlic until they are done. Let it cool. Sautee the onions. Set aside.

Blend the lentils with cumin and the dry oregano and/or Spanish paprika. Serve with caramelized onions on top. ENJOY!




2 onions chopped
2 leeks chopped
3 garlic cloves chopped
200 g ricotta cheese
65 g Parmesan cheese grated
3 eggs
salt
pepper
sage leaves
Oil

Stir fry the onion, leeks, and garlic. Let it cool down. Mix it with the cheeses, eggs, salt and pepper. Grease ramekins with oil,  and place a sage leave ( you can use rosemary or oregano) in the botton. Place the mixture on top. Cook it in mary's bath. I put water in a pot, and cook it on the stove. Test it with a knife to check when it is cooked. Enjoy!

Mushroom pate

200 grams of cleaned mushrooms chopped

1 leek chopped

3 garlic cloves chopped

olive oil

rosemary, oregano or any other dry herbs

breadcrumbs (I used old bread that I grinded)

salt

pepper

Spanish hot paprika

Stir fry the leek and garlic for 3 minutes, and add the mushrooms. Cook it at medium heat. add salt, pepper, and the herbs you desire. Let it cool. Blend it in a blender. For consistency, you can add breadcrumbs. Add Spanish hot paprika. ENJOY!

Galletas de Navidad y Galletas Hamantaschen

 




Es el momento nuevamente donde horneamos y decoramos galletas navideñas! Nuestras recetas tradicionales están aquí y para las decoradas están aquí

Sin embargo, en esta ocasión probamos una nueva galleta que tiene forma triangular rellena de mermelada .... está deliciosa

 Galletas Hamantaschen 

 
600 gramos de harina
200 gramos de mantequilla
150 gramos de azúcar
3 huevos
2 cucharaditas de levadura en polvo
una pizca de sal
mermelada (en mi caso albaricoques)

Mezcle el azúcar y la mantequilla hasta que esté cremoso. Agrega los huevos. Incorporar la harina, una pizca de sal. y levadura en polvo. Mezclar hasta tener una masa firme para enrollar y cortar las galletas. Deje reposar durante 1 hora en la nevera. Enróllalo y córtalo en círculos. Coloca un poco de mermelada en el medio. Usa tus dedos para darle forma de triángulo. Colóquelo en la nevera durante 30 minutos. Hornee a 350F durante 10 minutos o hasta que esté dorado. ¡DISFRUTAR!

Christmas Cookies and Hamantaschen cookies




 It is that time again where we bake and decorate Christmas cookies! Our traditional recipes are here and for the decorated ones are here

However, this time we try a new cookie that it is triangular in shape filled with jam....it is delicious

Hamantaschen 

600 grams of flour

200 grams of butter

150 grams of sugar

3  eggs

2 teaspoons of baking powder

a pinch of salt

jam (in my case apricots)


Mix sugar and butter until is creamy. Add the eggs. Incorporate flour, pinch of salt. and baking powder. Mix until you have a dough firm to roll pin and cut cookies. Let iot rest for 1 hour in the fridge. Roll it and cut in circles. Place a little of jam in the middle. Use your fingers to shape it in a triangle form. Place it in he fridge for 30 minutes. Bake it at 350F for 10 minutes or until golden brown. ENJOY!

Sopa Griega de garbanzos, Sopa de verduras de granja Irlandesa y pan con semillas

  


El tiempo de Acción de Gracias fue perfecto para tomar sopa ... calienta el cuerpo y reconforta el alma

Hice esta receta de sopa de garbanzos hace mucho tiempo desde este blog. Ahora, lo adapté a mi gusto .... ¡¡Está delicioso !!

Sopa Griega de garbanzos

250 gramos de garbanzos secos

60 ml de aceite de oliva

1 cebolla picada

2 puerros (picados)

2 dientes de ajo (picados)

1 hinojo (picado). Cuando hago ensalada de hinojo, congelo la capa exterior para hacer sopa.

600-700 gramos de caldo de verduras

sal y pimienta

limón

hinojo seco y hojuelas de chile para espolvorearlo

aceite de oliva y jugo de limón para rociar

Remojar durante la noche los garbanzos. Cocínelos hasta que estén tiernos. En una olla, caliente el aceite de oliva y sofría la cebolla, el ajo, el hinojo y los puerros. Agrega sal y pimienta. Agrega los garbanzos y el caldo de verduras. Déjelo hervir a fuego lento durante 10 minutos. Una vez que esté tibio, licúa todo hasta que quede suave. Caliéntelo y sírvalo con un chorrito de aceite de oliva, gotas de jugo de limón y hojuelas de hinojo y chile seco. ¡DISFRUTAR!



En Internet (olvidé dónde), leí sobre una sopa de verduras de granja irlandesa. Básicamente, lleva mantequilla, patatas, cebollas, puerros y guisantes ... el resto lo que tengas en el refrigerador. Es espeso y delicioso

Sopa de verduras de granja Irlandesa

5 papas grandes, peladas y picadas

3 zanahorias grandes, peladas y picadas

2 cucharadas de mantequilla

2 dientes de ajo picados

1 cebolla picada

2 puerros en rodajas

3/4 taza de guisantes cocidos cocidos

1/2 taza de crema de calabaza  ( me sobró de Acción de Gracias)

4 tazas de caldo de verduras

sal

Pimienta

Orégano

Derretir la mantequilla en una olla grande y colocar a fuego medio alto. Agrega el ajo, la cebolla y el puerro. Freír durante 3 minutos, luego agregar las papas y las zanahorias, tapar y cocinar a fuego lento durante 6 minutos a baja temperatura.

Agregue el caldo, cocine a fuego lento durante unos 20 minutos o hasta que las verduras estén cocidas. Licue con una batidora de mano o una batidora normal. Condimente con sal, pimienta y orégano. Agregue los guisantes cocidos. ¡Disfrutar!




Pan con semillas ... ¡y para las sopas!

300 gramos de harina de pan

50 gramos de harina integral

50 gramos de semillas (semillas de calabaza y girasoles combinados_

80 gramos de masa madre activada

260 gramos de agua

1/2 cucharadita de sal

  Mezclar las harinas y reservar. Combine la masa madre con agua y agregue la harina. Amasar durante 7 minutos. Déjalo reposar durante 20 minutos. agregue la sal y las semillas. Amasar durante 10 minutos. Colóquelo en un bol engrasado tapado. Dóblalo cada 30 minutos, por un total de 3 horas (6 veces en total). Colóquelo en la nevera durante la noche. Al día siguiente, sácalo de la nevera y dale forma de baguette. Déjalo reposar a temperatura ambiente. Hornee a 400F con vapor (agua en el horno) durante 20 minutos o hasta que esté listo. ¡DISFRUTAR!







Greek chickpeas soup, Irish farmhouse vegetable soup, and bread with seeds

 


Thanksgiving time was perfect for soup.....it warms the body and recomforts the soul


I made this chickpeas soup recipe a long time ago from this blog. Now, I adapted it to my taste....It is delicious!!

Greek chickpeas soup

250 grams of dried chickpeas

60 ml olive oil

1 onion (chopped)

2 leeks (chopped)

2 garlic cloves (chopped)

1 fennel (chopped). When I make fennel salad, I freeze the exterior layer for making soup.

600-700 grams of Vegetable stock

salt and pepper

lemon

dry fennel and chili flakes to sprinkle it

olive oil and lemon juice to drizzle 

Soak overnight the chickpeas. Cook them until they are tender. In a pot, warm olive oil and sauté the onion, garlic, fennel and leeks. Add salt and pepper. Add the chickpeas as well as the vegetable stock. Let it simmer for 10 minutes. Once it is warm, blend everything until is smooth. Warm it and serve with a drizzle of olive oil, lemon juice drops, and dry fennel and chili flakes. ENJOY!





In the internet (I forgot where), I read about an Irish Farmhouse Vegetable Soup. Basically, it has butter, potatoes, onions, leeks, and green peas.....the rest whatever you have in the freezer. Is thick and delicious

 Irish Farmhouse Vegetable Soup

5 large potatoes, peeled and chopped
3 large carrots, peeled and chopped
2 tablespoon butter
2 clove garlic minced
1 chopped onion
2 leek sliced
3/4 cup cooked green peas cooked
1/2 cup of butternut squash cream (1 cup I leftover from Thanksgiving)
4 cups of vegetable broth
Salt
Pepper
Oregano

Melt the butter in a large pot and place over a medium high heat. Add the garlic, onion, and leek. Fry for 3 minute, then add the potatoes and carrots, cover and simmer for 6 minutes at low temperature.

Add the stock,  simmer for about 20 minutes or until the vegetables are cooked. Blend with a hand blender or a normal blender. Season it with salt, pepper and oregano.  Add the cooked green peas. Enjoy!





Bread with seeds....and for the soups!

300 grams of bread flour

50 grams of whole wheat flour

50 grams of seeds (pumpkin seeds and sunflowers combined_

80 grams of sourdough activated

260 grams of water

1/2 teaspoon of salt

 Mix the flours and set aside. Combine the sourdough with water, and add the flour. Knead for 7 minutes. Let it rest for 20 minutes. add the salt and seeds. Knead for 10 minutes. Place it in a greased bowl covered it. Fold it every 30 minutes, for a total of 3 hours (6 times in total). Place it in the fridge over night. The next day, take it out of the fridge and shape it in a baguette form. Let it rest at room temperature. Bake it at 400F with steam (water in a pot) for 20 minutes or until it is done. ENJOY!
