Filled potatoes with vegetables, mushrooms, cheese and bechamel sauce
1 potato per person (or more if you want)
frozen vegetables (carrots, corn, green peas, green beans)
cheese (I used colby cheese)
Wash the potatoes. Boil the potatoes until they are cooked, but firm.
Cook the vegetables. Sliced the mushrooms and sautee them with garlic and oregano.
Make a bechamel sauce and let it cool.
Cut the potatoes by half, and take the flesh out. Mix the potatoes, frozen vegetables, sautee mushrooms and bechamel sauce. Heat it in the oven for 10 minutos. Before serve them, put some cheese on top and let it melt for 1 minute. ENJOY!
